SWEET AND SOUR MEATBALLS

Quick and easy sweet and sour meatballs with green pepper and pineapple
- For the meatballs:
- 1 pound (450g) lean ground beef
- 1 large egg
- 1/4 cup milk
- 1/2 cup breadcrumbs
- 2 tablespoons finely chopped onion
- 3/4 teaspoon salt
- 1/2 teaspoon Worchestershire sauce
- For the sauce:
- 1/4 cup ketchup
- 1/2 cup brown sugar
- 1/3 cup white vinegar
- 1 tablespoon soy sauce
- 1 tablespoon minced or grated ginger
- 2 tablespoons cornstarch
- 1 green pepper, cut into 1 inch pieces
- 1 can (19 fl oz, 540 mL) pineapple chunks and juice
- Sliced green onions, to garnish (optional)
Apple Crisp with Oat Topping

Preheat oven to 350 degrees F (175 degrees C)
- 6 apples - peeled, cored, and sliced
- 2 tablespoons white sugar
- 1/2 teaspoon ground cinnamon
- 1 cup brown sugar
- 3/4 cup old-fashioned oats
- 3/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 cup cold butter
THANKSGIVING LEFTOVERS CASSEROLE****

1. Preheat the oven to 350 degrees F
- 2 tablespoons butter
- 1 onion, chopped
- 2 cups of leftover vegetables (green beans and mushrooms are my favorites in this)
- 2 cups of leftover stuffing
- 2 cups leftover turkey (or any other meat)
- 1 can cream of mushroom soup (optional, I don't add it, but it's in the original recipe)
- 2 cups leftover mashed potatoes
- 2 eggs
- 1 cup shredded cheddar cheese
Pico de Gallo

A quick and easy fresh chopped tomato salsa that is so very hard to resist!
- 2 cups tomatoes, seeded and diced
- 1/4 cup onion, diced
- 1 jalapeno, seeded and diced
- 1 handful cilantro, chopped (I use parsley)
- 1 lime, juiced
- salt to taste

Place the graham crackers into the bowl of a food processor and pulse until finely ground
- 1 (14.4-oz) box chocolate graham crackers, broken into pieces
- 3-2/3 cups whole milk
- 2 (3.5-oz) packages instant vanilla pudding mix
- 2 (8-oz) packages cream cheese, softened
- 2 (7.5-oz) jars marshmallow créme
- 1 (11.5-oz) bag milk chocolate chips
- 1 (10.5-oz) bag mini marshmallows, divided
Maple Salmon

In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper
- 1 1 1 pound salmon
- 1/4 1/4 1/4 cup maple syrup
- 12.5 Maple Syrup, 12.5 oz
- 2 2 2 tablespoons soy sauce
- 1 1 1 clove garlic, minced
- 1/4 1/4 1/4 teaspoon garlic salt
- 1/8 1/8 1/8 teaspoon ground black pepper
Veggie Burger

In a large skillet heat 1 tablespoon oil over medium high heat
- 3 tablespoons olive oil
- 3/4 cup fresh corn kernels or frozen, thawed
- 6 mushrooms, finely chopped
- 2 scallions, finely chopped
- 1/2 red bell pepper, finely chopped
- 1 clove garlic, finely chopped
- 1 teaspoon cumin
- Dash cayenne pepper
- 1/2 cup chopped fresh spinach
- 1 carrot, peeled and grated
- 1 small potato, peeled and grated
- 1 egg white
- Salt and pepper
- 1/2 cup fresh bread crumbs
- 1 cup plain yogurt
- 2 tablespoons chopped fresh mint

Cook the butter in a heavy medium skillet over medium heat until it begins to brown, about 2 minutes
- 1/2 cup unsalted butter
- 1 tablespoon fresh thyme leaves
