- 1 cup grated Parmigiano-Reggiano or Pecorino Romano
- 1/2 cup torn sweet basil leaves or 1/4 cup chopped tarragon leaves

- 2 garlic cloves
- 2 oz sun-dried tomatoes in oil
- 4 cups chicken broth
- Oyster crackers, for garnish
- Place Roma tomatoes, onion, tomato paste, salt, garlic, sun-dried tomatoes, and broth into the Vitamix container in the order listed and secure lid.
- Select Variable 1. Start machine and slowly increase to its highest speed. Blend for 6 minutes or until heavy steam escapes from the vented lid. Garnish with oyster crackers.
