Pour enough olive oil into a large frying pan to reach a depth of 2 inches
- Olive oil, for frying
- 1 cup buttermilk
- 2 cups Italian-style bread crumbs
- 1 box store-bought cheese ravioli (about 24 ravioli)
- 1/4 cup freshly grated Parmesan
- 1 jar store bought marinara sauce, heated, for dipping
Teriyaki Chicken

Heat cooking oil in a large pan over medium heat
- 1.3 pounds (600 grams) skinless boneless chicken thighs, cut into 1-1/2-inch pieces
- 1 tablespoon cooking oil
- 1/4 cup low-sodium soy sauce
- 3 tablespoons light brown sugar (or white granulated sugar)
- 3 tablespoons cooking Sake ((rice wine vinegar or apple cider vinegar)
- 2 tablespoons Mirin (optional -- white wine or dry sherry can be substituted)
- 1 tablespoon sesame oil, optional (adds a wonderful flavour)
- 2 teaspoons minced garlic (2 cloves garlic)*
- 1 shallot/green onion stem, sliced to garnish
- 4 cups broccoli florets, lightly steamed
- 1 teaspoon cornstarch (or corn flour) mixed with 2 teaspoons water (ONLY IF NEEDED)
Southwestern Egg Rolls with Salsa Dipping Sauce

For the egg rolls: Preheat the oven to 425 degrees F
- Nonstick cooking spray
- 2 1/2 cups shredded Mexican blend cheese
- 2 cups frozen corn, thawed
- One 15-ounce can black beans, rinsed and drained
- One 10-ounce package frozen chopped spinach, thawed and squeezed dry
- One 4-ounce can diced green chiles, drained
- 4 scallions, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1 1/2 teaspoons kosher salt
- One 16-ounce package egg roll wrappers
- 1 egg, slightly beaten
- 5 plum tomatoes, quartered
- 1 small clove garlic, minced
- 1/2 jalapeno, seeded and finely chopped
- 3 scallions, white and light green parts only, finely chopped
- 1 cup loosely packed cilantro leaves and stems, finely chopped
- Juice of 1/2 lime
- 2 teaspoons kosher salt

Crunchy Taco Homemade Hamburger Helper

Brown ground beef with shallot in a large skillet over medium-high heat
- 1 lb lean ground beef
- 1 large shallot, chopped (or 1/2 small onion)
- 1 recipe homemade taco seasoning or 1 taco seasoning packet, don’t add water
- 1/2 cup salsa
- 1-3/4 cup chicken broth
- 1 cup long grain white rice (basmati or jasmine rice)
- 1 cup shredded sharp cheddar cheese
- Toppings: crushed tortilla chips, salsa, sliced avocado, chopped green onions
