Bring a large pot of water to a boil over medium-high heat; prepare a bowl of ice water
- Kosher salt and freshly ground black pepper
- 2 large carrots, peeled, trimmed and cut into 2-inch pieces
- 8 ounces green beans, trimmed
- 2 large or 6 small portobello mushrooms, cleaned, stemmed and gills removed
- 1 zucchini, cut lengthwise into thirds
- 1 yellow squash, cut lengthwise into thirds
- 1 head radicchio, quartered
- 6 tablespoons extra-virgin olive oil
- 1 head Bibb lettuce, outer leaves removed
- 1 small shallot, finely chopped
- 1 lemon, zested and juiced
- Freshly grated Parmesan, for garnish
QUICK & EASY FRIED RICE

Heat oil in a wok or nonstick pan over medium-high heat
- 1 tablespoon canola oil
- 2 cloves garlic minced
- 2 teaspoons minced ginger
- 2 green onions sliced and separated
- 3/4 cup frozen carrots or diced fresh
- 3/4 cup frozen peas
- 2 eggs cooked and chopped
- 1 cup chopped cooked chicken pork or shrimp (optional)
- 3 tablespoons soy sauce
- 1/2 teaspoon sesame oil
- 3 1/2 cups cold cooked white rice
Cheesy Rigatoni Pepper Bake

Bring a large pot of salted water to a boil
- Peppy Salad:
- Kosher salt and freshly ground black pepper
- 1 pound rigatoni
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, finely diced
- Two 28-ounce cans diced tomatoes
- One 6-ounce can tomato paste
- Two 8-ounce balls fresh mozzarella, cut into large cubes
- 9 tablespoons grated Parmesan
- One 1-pound bag mini sweet peppers, stemmed and halved
- One 5-ounce bag baby spring lettuce leaves
- 1 cup halved pepperoncini
- 1 cup halved cherry tomatoes
- 1 red onion, sliced
- 1 mini red pepper, thinly sliced
- 3 tablespoons olive oil
- Juice of 1 lemon
- Kosher salt and freshly ground black pepper
