These yummy applesauce streusel muffins are perfect for breakfast, brunch or quick snack
- Streusel Topping:
- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup applesauce
- 2 cups all-purpose flour
- 1 egg, beaten
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon salt
- 1 apple, peeled and diced
- 1/4 cup butter, softened
- 1/2 cup flour
- 1/2 cup quick-cooking oats
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
Lemon Butter Cookies

Yum! These buttery lemon cookies are one of my favorites
- 1 cup (2-sticks) Land O’ Lakes unsalted butter, room temperature
- 2/3 cup Domino granulated sugar
- 1 large egg
- 2 teaspoons lemon zest
- 1 tablespoon lemon juice
- 2 1/2 cups Gold Medal all-purpose flour
- Powdered sugar, for dusting
Roasted Tomato Soup Recipe

1. Preheat oven to 400°F
- 1 1/2 pounds tomato(es), beefsteak, cut in half crosswise
- 1 medium onion(s), sweet, such as Vidalia, peeled and cut in half crosswise
- 3 clove(s) garlic, large cloves, unpeeled
- 1 1/3 tablespoon oil, olive, extra-virgin, divided (1 Tbsp and 1 tsp)
- 1/4 teaspoon salt, or to taste
- pepper, black ground, to taste
- 2 cup(s) broth, chicken, less sodium, or vegetable broth, divided
- 1/4 cup(s) juice, tomato
- 1 teaspoon tomato paste
- 1/4 teaspoon Worcestershire sauce
- 1 tablespoon basil, fresh, chopped
- sugar, brown, to taste (optional)
- 1/2 cup(s) corn, whole kernel frozen, thawed, or fresh from the ear

Heat 1 Tbsp of olive oil over medium-high heat in a 5-quart pot
- 1 Tbsp olive oil
- 1 (16-oz) bag frozen chopped onions, red peppers, and green peppers mix, thawed
- 2 lbs lean ground beef
- 2 (1.25-oz) packs low sodium taco seasoning
- 1 tsp ground black pepper
- 1/2 tsp crushed red pepper
- 2 (8-oz) cans Spanish-style tomato sauce
- 8 cups low-sodium beef broth
- 1/2 cup chopped fresh cilantro
- Sour cream for garnish
- Crushed hard taco shells for garnish
