Cornbread Salad 2

Directions Toss the tomatoes, bell pepper, cilantro and 1/2 teaspoon salt in a medium bowl
- 4 plum tomatoes, chopped
- 1 green bell pepper, chopped
- 1/4 cup chopped fresh cilantro
- Kosher salt
- 1 cup sour cream
- 1/4 cup mayonnaise
- 2 scallions, minced
- Juice of 1/2 lime
- 1/4 teaspoon chili powder
- 2 cups crumbled cornbread
- 2 15 -ounce cans black-eyed peas, drained and rinsed
- 1 cup frozen corn, thawed
- 1 cup shredded cheddar or Mexican-blend cheese
Slow Cooker Beef Tips

What To Do: Place beef in a 5-quart slow cooker
- 1 1/2 pounds beef tips or cubed beef stew meat
- 1/2 pound mushrooms, quartered
- 1/2 onion, cut into slivers
- 1 (1-ounce) package dry onion soup mix
- 1 (10-3/4-ounce) can cream of mushroom soup
- 1 (10-1/2-ounce) can condensed beef broth
- 1/4 cup red wine
- 1 tablespoon Worcestershire sauce

- 1 cup grated sharp Cheddar cheese
- 1/2 cup grated Monterey Jack cheese
- 2 green onions, finely chopped
- 1 dash cayenne pepper
- 8 butter crackers, crushed, such as Ritz
- 8 slices bacon, cooked and crumbled
- Corn chips, crackers or bagel chips, for serving

A version of the Kentucky Butter Cake
- Cake Batter:
- 1 cup softened butter
- 2 cups white granulated sugar
- 4 whole eggs
- 1 tsp salt
- tsp baking powder
- 1/2 tsp baking soda
- 2 tsp vanilla extranct
- 3 cups packed all-purpose flour
- 1 cup bettermilk
- Butter Sauce:
- 1 cup white granulated sugar
- 1/4 cup water
- 1/2 cup butter
- 1 Tablespoon vanilla
- Brown Butter Icing:
- 1/4 cup butter
- 2 cups powdered sugar, packed down
- 1 tsp vanilla
- 2 Tablespoons heavy/whipping cream
- 1/2 cup chopped pecans or walnuts

- 1 cup non fat Greek yogurt (remove excess water if there’s some on top)
- 1 cup self rising flour (I ended up adding about 2 tbsp extra because it was a little sticky)
- 1 beaten egg with 1 tbsp water to brush the bagels with before cooking

- 1 cup shredded cheddar cheese
- 1 (4 oz) can chopped green chilies, drained
- 2 Tblsp picante sauce
- 1/2 tsp chili powder
- 1/4 tsp garlic salt
- 1/4 tsp onion powder
- 2 (8 oz) cans crescent dinner rolls
Watermelon Cookies
