Simple Meat and Potatoes Casserole

Cut steak into bite size pieces, flour and brown quickly in hot oil
- 1 round steak, cubed
- 4 -5 russet potatoes
- 1 onion, sliced
Salmon Patties

In a large bowl, combine all ingredients except oil; mix well and form into 6 equal-sized patties
- 2 (15.5-ounce) cans red salmon, drained and flaked (skin and bones discarded)
- 2 eggs
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- diced white onion or green onion to taste.
- 1/4 cup vegetable oil
Lemon Risotto

Preheat your rice cooker on Sauté-Then-Simmer™ for 5 minutes
- 2 cups Arborio rice
- 1 qt chicken stock
- 1 medium onion, finely diced
- 2 cloves garlic, finely diced
- 3 tblsp butter
- juice of one large lemon
- 1/2 cup Parmesan cheese
- optional: chives and lemon zest for garnish
Honey Pecan Pork Cutlets

Dredge cutlets in flour, shaking off excess
- 1 pound boneless pork loin cutlets, pounded to 1/4-inch thickness
- Flour for dredging
- 3 tablespoon butter
- 1/4 cup honey
- 1/4 cup chopped pecans

- 2 (20 oz.) pkgs. Oreo cookies
- 1/2 stick butter
- 1 (8 oz.) cream cheese
- 1 c. powdered sugar
- 3 1/2 c. milk
- 2 sm. French vanilla instant pudding boxes
- 1 (12 oz.) Cool Whip
Mushroom and Corn Spoon Bread

Preheat oven to 400ºF. Grease an 8x8-inch baking dish with 1 tablespoon butter
- 3 tablespoons unsalted butter (divided)
- 1/4 cup olive oil
- 1 pound shiitake mushrooms (stems removed, sliced 1/4-inch thick)
- 1 medium yellow onion (peeled, sliced 1/4-inch thick)
- 1 tablespoon fresh thyme (chopped)
- Kosher salt and black pepper (to taste)
- Corn Spoon Bread : 2 tablespoon unsalted butter
- 2 cups milk
- 1 cup yellow cornmeal
- 4 large eggs (separated)
- 1/2 teaspoon cayenne pepper
- 2 teaspoons sugar
- 1 teaspoon Kosher salt
- Kosher salt and freshly ground black pepper (to taste)

- 2 pans yellow cornbread
- 1 dozen boiled eggs
- 1 chopped onion
- 3 - 4 stalks chopped celery
- poultry seasoning, sage and thyme to taste

- 1 cup chopped walnuts
- 1 (15-ounce) can 100% pure pumpkin (not pie filling)
- 3/4 cup confectioners' sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 (16-ounce) container frozen whipped topping, thawed
Mini Fruit Pockets

What To Do: Preheat oven to 425 degrees F
- 1 (14.1-ounce) box rolled refrigerated pie crust
- 1/4 cup strawberry preserves or your favorite flavor
- 1 cup confectioners' sugar
- 1 tablespoon milk
- Decorative sugar for garnish (optional)
Too Easy Hotdish

Bake 400 degrees Spray 9 x 13 pan with Pam, put ground meat in the bottom, spreading it out as evenly as posible
- 1 1/2 lbs lean ground meat
- 2 cans condensed soup such as mushroom and celery (can use the two together, recommended)
- 1 lb package frozen tator tot (Can use hashbrowns)
- 1 cup shreeded cheese (no more than this or doens't work right)
- Can add thin layer of chopped onions if desired
