Key Lime Pound Cake

Preparation 1. Preheat oven to 325°
- 1 cup butter, softened
- 1/2 cup shortening
- 3 cups sugar
- 6 large eggs
- 3 cups all-purpose flour $
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon lime zest
- 1/4 cup fresh Key lime juice
- Key Lime Glaze
- 1 cup powdered sugar
- 2 tablespoons fresh Key lime juice
- 1/2 teaspoon vanilla extract
- Whisk together powdered sugar, fresh Key lime juice, and vanilla until smooth. Use immediately.

- 1 cup unsalted Challenge butter plus additional for buttering parchment
- 2 cups packed brown sugar
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 3 1/2 to 4 cups sifted powdered sugar
- 1 1/2 cups coarsely chopped pecans plus additional for topping if desired
Seared Steak with Brussels Sprouts and Almonds

Step 1 Season steak with coarse salt and ground pepper
- 1 skirt steak (1 1/2 pounds), cut into 4 pieces
- 2 tablespoons butter
- 1 pound brussels sprouts, trimmed and thinly sliced
- 1/4 cup chopped almonds, toasted
- 2 teaspoons fresh lemon juice
Bread Pudding

Cube bread, soak in milk. Add eggs, sugar, vanilla, cinnamon and raisins
- Praline Sauce:
- 1 loaf French Bread
- 1 qt. milk
- 3 eggs
- 2 cups sugar
- 2 tblsp. vanilla
- 2 tsp cinnamon
- 1 cup raisins
- 3 tblsp melted butter
- 1/4 cup honey
- 2 cups brown sugar
- 2 cups pecan pieces
- 1 1/2 cup water
- 1/2 tsp vanilla.
- Cook slowly until thick. Stir frequently
Butterfinger Frosty

Whirl all together in a blender Pour into a tall glass, grab a straw and enjoy!!
- 1/8 cup cream
- 7/8 cup water
- 1 tbsp Designer Whey, chocolate — 1 scoop ( get at Health Food Store)
- 1 1/2 tsp splenda
- 1 1/2 tsp Peanut Butter — or any nut butter
- 2 cups crushed ice
One Bowl Apple Cake

- 1 3/4 cups sugar
- 2 heaping teaspoons cinnamon
- 1/2 cup oil
- 6 medium Gala or Fuji or Honey Crisp apples

Spinach and White Beans

Defrost the spinach in the microwave according to package directions
- 2 tablespoons extra virgin olive oil
- 3-4 garlic cloves, chopped
- 10 ounces boxed frozen chopped spinach
- 14 ounces canned white beans (like cannellini or great northern), rinsed and drained
- Ground nutmeg
- Salt and freshly ground black pepper
