Asparagus (Cheesy) Casserole Recipe

1. In a large saucepan, bring 1/2 in
- 2 pounds fresh asparagus, trimmed, cut into 1" pieces
- 1/4 cup butter, cubed
- 1/4 cup all-purpose flour
- 2 cups milk or half-and-half cream
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 hard-cooked eggs, sliced
- 1 cup (4 ounces) shredded cheddar cheese
- 1 cup crushed potato chips
1-2-3 Grilled Salmon

1. In a smal bowl, combine the oil, soy sauce, mustard and garlic
- 1/3 cup olive oil
- 3 Tbsp. reduced-sodium soy sauce
- 2 Tbsp. Dijon mustard
- 1/4 tsp dried minced garlic
- 6 salmon fillets (5 oz. each)
Broiled Crab Meltaways

Combine first 6 ingredients and spread on English muffin halves
- stick butter/margarine:
- 2 T. Mayonnaise
- 1/2 t. Garlic salt
- 1 lb. Lump crabmeat
- 1 (6 oz. jar) Kraft Old English Sharp Cheddar Cheese
- 1/2 t. Seasoned salt
- 6 English muffins
Oven-Fried Fish Nuggets

In a shallow bowl, combine the bread crumbs, cornflakes, Parmesan cheese, salt and pepper
- 1/3 cup seasoned bread crumbs
- 1/3 cup crushed cornflakes
- 3 Tbsp. grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp. pepper
- 1-1/2 lbs. cod fillets, cut into 1-in. cubes
- Butter-flavored cooking spray
Italian Sausage Calzone

Unroll pizza dough onto an ungreased baking sheet; pat into a 14 inch x 11 inch rectangle
- 1 tube (13.8 ozs.) refrigerated pizza crust
- 1 can (8 oz.) pizza sauce
- 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
- 1 lb. bulk Italian sausae, cooked and drained
- 1 jar (4-1/2 oz) sliced mushrooms, drained
- 2 cups (8 oz) shredded mozzarella cheese
Mushroom Turkey Tetrazzini

Cook spaghetti according to package directions
- 12 ounces uncooked spaghetti, broken into 2-inch pieces
- 2 teaspoons chicken bouillon granules
- 1/2 pound sliced fresh mushrooms
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 cup sherry or reduced-sodium chicken broth
- 3/4 teaspoon salt-free lemon-pepper seasoning
- 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1 cup fat-free evaporated milk
- 2/3 cup grated Parmesan cheese, divided
- 4 cups cubed cooked turkey breast
- 1/4 teaspoon paprika
Triple Chocolate Cake

Cook pudding according to package directions
- 1 Dark Chocolate Fudge Cake Mix (Duncan Hines)
- 1 large box chocolate pudding mix (not instant)
- 3 cups cold milk
- 2 cups chocolate chips
- Note: Can use vanilla cake mix and pudding.
Seafood Norfolk

Mix first 6 ingredients and then mix stuffing with melted butter and put on top of casserole
- Mix first 6 ingredients:
- 1 lb. crab meat
- 1 lb. shrimp
- 1 can cream of mushroom soup
- 2 cups mayonnaise
- 1-1/2 cups chopped celery
- 1 can sliced water chestnuts
- (FIRST SIX ABOVE)
- 1/2 pkg. Pepperidge Farm Herb stuffing
- 1/2 stick butter
Tomato Soup

In saucepan, saute onion in butter until tender
- 1 medium onion, chopped
- 2 tbsp. butter
- 2 cans (14 1/2 ozs. each) diced tomatoes, undrained
- 2 cans (10 3/4 ozs. each) condensed tomato soup, undiluted
- 1-1/2 cups milk
- 1 tsp. sugar
- 1/2 to 1 tsp. dried basil
- 1/2 to 1 tsp. paprika
- 1/8 to 1/4 tsp. garlic powder
- 1 pkg. (8 ozs.) cream cheese, cubed
Grilled Chicken with Dijon and Meyer Lemon

Combine the lemon juice zest, mustard, rosemary and crushed red pepper in a small bowl
- 4 Meyer lemons, 2 zested and juiced and 2 halved
- 1 cup Dijon mustard
- 2 tablespoons finely chopped rosemary leaves
- 1 teaspoon crushed red pepper flakes
- 2 (3-pound) chickens, backbone removed and split in 1/2
- Extra-virgin olive oil
- Kosher salt
