Cook carrots and drain. Add rest of ingredients
- 4-1/2 c. sliced carrots, cooked
- 2 medium onions, sliced
- 1 medium green pepper, chopped
- 1 can tomato soup
- 3/4 c. vinegar
- 2/3 c. sugar
- 1/4 c. cooking oil
- 1 tsp. Worchestershire sauce
- 1 tsp. prepared mustard
- 1/2 tsp. salt
Mom's Fried Rice w/Chicken

In a large skillet, heat oil over medium-high heat
- Cubed chicken or steak as desired.
- 1 tsp canola oil
- 1 egg, beaten
- 8 bacon strips, chopped
- 1 cup chopped fresh mushrooms
- 8 green onions, thinly sliced
- 3 cups cooked rice
- 1 cup bean sprouts
- 1 cup frozen peas, thawed
- 1/4 cup reduced-sodium soy sauce
Thyme Grilled Vegetables

In an ungreased 13 inch x 9 inch x 2 inch disposable foil pan, combine the potatoes, broth, oil, thyme and salt
- 16 small red potatoes (about 2 pounds), halved
- 1/2 cup chicken broth
- 1/4 cup olive oil
- 2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
- 1/2 teaspoon salt
- 1 each large green, sweet red and yellow pepper, julienned
- 1 jar (15 ounces) pearl onions, drained
Easy Weeknight Chicken Spaghetti

1. Cook spaghetti according to package directions until al dente
- 2 cups chicken breast, pre-cooked
- 1/4 cup green pepper
- 1/4 cup yellow onion
- 16 oz. chicken broth
- 1 10-1/2 oz. can cream of chicken soup
- 1 10-1/2 oz. can cream of mushroom soup
- 1 lb. spaghetti, dry
- 1 tsp. seasoned salt
- 2 cups shredded cheese
LEMON ALMOND BREAD

Preheat oven to 350 degrees and grease and flour a 9x5x3-inch loaf pan
- 1/2 CUP BUTTER, SOFTENED
- 1 CUP SUGAR
- 2 EGGS
- 2 CUPS FLOUR
- 1 TSP. BAKING POWDER
- 1/2 TSP. SALT
- 3/4 CUP SOUR CREAM
- 2 TBSP. LEMON JUICE
- 2 TSP. LEMON EXTRACT
- 1-2 TBSP. GRATED LEMON PEEL
- 1 CUP SLICED ALMONDS (MAY USE PECANS)
Beans & Franks Bake

Prepare corn bread batter according to package directions; set aside
- 2 packages (8-1/2 ounces each) corn bread mix
- 1 can (28 ounces) baked beans
- 4 hot dogs, halved and sliced
- 1/2 lb. sliced bacon, cooked and crumbled
- 1 cup ketchup
- 1/2 cup packed brown sugar
- 1/2 cup chopped onion
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
Zucchini Bread

Preheat oven to 350 degrees
- 3-1/4 cups all-purpose flour
- 1-1/2 teaspoons salt
- 1 teaspoon ground nutmeg
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 1/3 cup water
- 2 cups grated zucchini, unpeeled
- 1 cup chopped walnuts or pecans
Cheese Stuffed Meatloaf

In large bowl, mix together beef, bread, milk, salt and pepper
- 1-1/2 lbs. ground chuck beef
- 3 slices fresh berad, cubed
- 1 cup milk
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 cup chopped onion
- 1/4 cup chopped green peper
- 1/4 cup chopped celery
- 2 tablespoons lemon juice
- 1 egg, slightly beaten
- 1 cup (4 oz.) shreddde cheddar cheese
- 3 slices fresh bread, finely crumbled
Lemon-Orange Shrimp & Rice

Prepare rice mix according to package directions, simmering for about 10-15 minutes or just until rice is tender
- 2 pkg. (6.2 oz. each) fried rice mix
- 1-1/2 lbs. uncooked medium shrimp, peeled and deveined
- 1 Tbsp. canola oil
- 1/4 cup orange marmalade
- 2 tsp. grated lemon peel
- 3 cups frozen sugar snap peas, thawed
Finnish Viipuri Twist

Combine 2-1/2 cups of the flour, the yeast, cardamom, and nutmeg
- 5-1/2 to 5-3/4 cups all-purpose flour (I usually have to add an additional 1 cup)
- 2 packages active dry yeast
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground nutmeg
- 2 cups milk
- 3/4 cup sugar
- 1/4 cup butter or margarine
- 1 teaspoon salt
- 2 eggs
