Chicken Alfredo Casserole 15 Minutes

Heat oil in large skillet over medium heat
- 1 (38oz.) pkg. Cooking Light Alfredo, microwaved
- 1 Tbsp. Olive Oil
- 12 oz. Kale, washed, drained, chopped
- 4 oz. Wellsley Farms Precooked Bacon, crumbled
- Note: Can add ham, broccoli, chicken tenders, tuna, peas.
Chicken and Wild Rice Soup

Heat vegetable oil in large saucepan over med-hi heat
- 1 (6 ounce) pkg. long-grain and wild rice mix, pepared according to package directions
- 1 T. vegetable oil
- 2 boneless skinless chicken breast halves, chopped
- 2 cups sliced fresh mushrooms
- 1-1/4 cups chopped onion
- 2 cloves garlic
- 2 (14.5 ounce) can chicken broth
- 1/2 t. dried tarragon
- 1/4 t. thyme
- 1/4 t. salt
- 1/8 t ground black pepper
- 1 (12 fluid ouce) can Nestle Carnation Evaporated Milk
- 2 T. cornstarch
- 1 T. dry white wine
- sliced green onions and toasted slivered almonds (optional) I don't use them
Oreo Truffles

Mix crushed cookies with cream cheese
- 1 pkg. Oreo cookies finely crushed
- 8 oz. cream cheese, softened
- 2 pkgs. semi-sweet chocolate
Cinnamon Bun Scones

1. Heat oven to 425 degrees 2
- GLAZE:
- 2 cups all-purpose flour (I use 1/2 whole wheat and 1/2 white)
- 1 cup rolled oats (quick or old fashioned, uncooked)
- 1/4 cup granulated sugar, plus
- 2 Tbls. granulated sugar
- 1 Tbls. baking powder
- 1/4 tsp. salt
- 8 Tbls. butter, chilled and cut into pieces
- 3/4 cup milk
- 1 egg, lightly beaten
- 1 tsp. vanilla extract
- 1/2 cup toasted chopped pecans
- 2 tsp. ground cinnamon
- 3/4 cups confectioners sugar
- 3 to 4 tsps. orange juice or milk
- 1 to 2 tsps. orange zest, grated
Fried Rice

In a small bowl, combine seasoning, mix and water; set aside
- 1 envelope fried rice seasoning
- 2 tablespoons water
- 2 geen onions, chopped
- 2 tablespoons vegetable oil
- 1 egg, lightly beaten
- 3 cups cold cooked instant rice
- 1/2 cup peas
Almost Taco Salad

Mix together cream cheese and sour cream
- 16 oz. can refried beans
- 8 oz. carton sour cream
- 8 oz. pkg. cream cheese
- 1 tsp. garlic powder
- 1 tsp. seasoned salt
- 1/4 head lettuce, chopped
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1 cup cheddar cheese, shredded
- 1 cup tomatoes, chopped
- taco sauce
Onion-Cucumber Salad

Pull tines of fork firmly down length of cucumber, repeating around cucumber; slice thinly
- 1/2 cucumber
- 1/4 medium onion
- 1/4 cup vinegar
- 1/4 cup water
- 2-3 tsp. sugar
- 1/8 tsp. salt
- dash of pepper

Preheat oven to 400 degrees
- 17.3 oz. pkg. puff pastry sheets
- Butter, cinnamon and sugar as needed
Kabobs, Steak Sandwich

Sprinkle beef with steak seasoning
- 1 lb. boneless beef sirloin steak, cut ino 1-inch cubes
- 1 teaspoon steak seasoning
- 1 medium sweet red pepper, cut into 1-inch chunks
- 6 ounces focaccia bread, cut into 1-inch cubes
- 1 medium onion, cut into 1-inch chunks
- 1 tablespoon olive oil
- 3 slices provolone cheese, cut into strips
Pistachio Cake

In a large bowl, combine the cake mix, pudding mix, eggs, soda and oil; beat on low speed for 30 seconds
- Icing:
- 1 pkg. (18-1/4 oz.) yellow cake mix
- 1 pkg. (3.4 oz.) instant pistachio pudding mix
- 4 eggs
- 1 cup club soda
- 1/2 cup canola oil
- 1/2 cup chopped walnuts
- 1 cup cold heavy whipping cream
- 3/4 cup cold 2% milk
- 1 pkg. (3.4 oz.) instant pistachio pudding mix
- 2 tsp. confectioners' sugar
- 1/2 cup chopped walnuts
