- ¼ cup unsweetened applesauce
- ¼ cup aquafaba
- 1 tablespoon apple cider vinegar
- 1 ½ cups rolled oats
- ½ cup unbleached all-purpose flour
- ¼ cup pure cane sugar
- 1 ½ teaspoon baking powder
- ½ teaspoon sea salt
- ¼ teaspoon ground cinnamon
- Fresh berries, for serving
- FOR THE SWEET POTATO "BUTTER"
- 1 (8-ounce) sweet potato, peeled and cut into 1-inch dice (1 ½ cup)
- ¼ cup pure maple syrup
- 2 tablespoons unsweetened, unflavored plant milk
- 1 teaspoon tahini
- 1 teaspoon pure vanilla extract
- 2 pinches of ground cinnamon
- 1 pinch of salt (optional)

- 3 oz gruyere cheese, cut in 1/2 inch cubes
- 1/4 cup dried cranberries
- 1/2 cup chopped walnuts plus 10-12 walnut halves
