Pie - Pepermint-Chocolate Pie

CHOCOLATE SAUCE: Combine sauce ingredients and melt over medium heat, stirring continually

- 1 pkg Thin Chocolate Wafers
- 1/2 gallon peppermint ice cream
- 1 cup semi sweet chocolate chips
- 1 cup evaporated milk
- 1 cup miniature marshmallows
Lentil Soup

Saute carrots and celery in olive oil until tender Then add potatoes, lentils, salt, and water
- 1 large onion, chopped
- 1 cup celery, chopped
- 3-4 cups diced potatoes
- 2 cups carrots, sliced
- 1 cup brown lentils
- 8 cups water
- 1 large can diced tomatoes
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 1/2 tsp dried basil
- 1/2 - 1 package frozen chopped spinach

Crispy Red Breakfast Potatoes

- 1 1 1 pound red potatoes
- 1/4 1/4 1/4 teaspoon smoked paprika
- 1/4 1/4 1/4 teaspoon salt
- 1/8 1/8 1/8 teaspoon garlic powder
- 1/8 1/8 1/8 teaspoon onion powder
- Dash Dash fresh ground black pepper
- 1 1/2 1 1/2 1/2 tablespoons olive oil
DARK CHOCOLATE MOUSSE WITH HAZELNUTS AND CHOCOLATE-DIPPED APRICOTS

Melt chocolate pieces on medium power in microwave for 1 minute
- 3/4 cup dark chocolate pieces
- 12 oz. low fat soft (silken) tofu
- 3 Tbsp. Frangelico (hazelnut) liqueur
- 1/4 cup chopped hazelnuts, toasted
- Fat free whipped topping
Fresh Veggie Pizza with Whole Wheat Crust

Preheat oven to 425* F. Place thawed bread dough on a lightly floured surface and let rest for 15 minutes
- 1 lb. frozen whole wheat dough, thawed
- 2 medium zucchini or yellow squash, sliced
- 1 medium bell pepper (red, yellow or green), chopped
- 1 Tbsp. olive oil
- 1 1/2 cups fresh mushrooms, sliced
- 2 green onions, sliced (1/4 cup)
- 2 vine-ripe tomatoes, sliced
- 1 (8 oz) can pizza sauce
- 1/2 cup coarsely chopped ripe olives
- 3/4 cup (4 oz.) shredded low fat cheese (mozzarella or provolone)
- 1/4 cup grated Parmesan cheese

- 1 cup coarsely crushed graham crackers or pecans
- 1/2 cup toffee bits (optional)
Tomato Bisque

- 2 family cans of tomato soup
- 1 tsp marjoram
- 1 bay leaf
- 1/2 tsp paprika
- 1/2 tsp curry powder
- 1/4 tsp white pepper
- 1 pint whipping cream (2 ayos)
GRILLED SUMMER VEGETABLES WITH BALSAMIC VINAIGRETTE

Place all vegetables in large bowl
- 4 small zucchini, cut lengthwise
- 1 red onion, sliced thin
- 2 yellow summer squashes, sliced thin
- 2 firm, ripe tomatoes, sliced in 1/4 inch slices
- 1/2 pound fresh asparagus spears, trimmed
- 2 Portobello mushrooms, sliced into 1/2 inch pieces
- 2 red or yellow bell peppers, sliced into thin slices
- 1 1/2 Tbsp. olive oil
- 3 Tbsp. balsamic vinegar
- 1 tsp. sea salt
- 1 tsp. fresh black pepper
- 2 tsp. garlic, chopped
Cereal - Swiss Meusli

- 1/2 cup milk
- 1/4 cup quick oats
- 3 bananas chopped
- 3 medium oranges diced
- 3 apples, shredded
- 1 tsp vanilla
- 1 carton strawberries sliced (reserve 5-6 for garnish)
- 1 carton strawberry yogurt
- May use any seasonal fruit in place of strawberries and complimentary yogurt
