Spaghetti with Olive Oil and Garlic

1. Bring a large pot of cold water to a boil over high heat and salt it generously
- 1 teaspoon kosher salt, plus more for pasta-cooking water and to taste
- 1 pound spaghetti
- 4 to 6 cloves garlic
- 1/2 cup extra-virgin olive oil
- Freshly ground black pepper
- pinch of crushed red pepper flakes
- 2 handfuls of fresh spinach
- Small handful fresh flat-leaf parsley leaves
- Chunk of Parmesan cheese
Pie - USS Missouri Buttermilk Pie

- 2 C. sugar
- 1/2 C. butter, softened
- 3 eggs
- 3 T. all-purpose flour
- 1/4 tsp. salt
- 1 C. buttermilk
- 1 (9-inch) unbaked pie crust with edges of crust crimped high
- 1/2 C. chopped pecans, toasted
Muffins - Banana Crunch Muffins

Preheat the oven to 350 degrees F
- 3 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 pound unsalted butter, melted and cooled
- 2 extra-large eggs
- 3/4 cup whole milk
- 2 teaspoons pure vanilla extract
- 1 cup mashed ripe bananas (2 bananas)
- 1 cup medium-diced ripe bananas (1 banana)
- 1 cup small-diced walnuts
- 1 cup granola
- 1 cup sweetened shredded coconut
- Dried banana chips, granola, or shredded coconut, option
HOMEMADE CINNAMON APPLESAUCE

Peel, core, and coarsely chop apples
- 3 lbs. apples (McIntosh or Gala)
- 1/4 cup water
- 3 Tbsp. sugar
- 1 Tbsp. cider vinegar
- 2 tsp. cinnamon
Vegetarian Minestrone Soup with Parmesan Crisps

Heat 2 quarts water to a boil, add pasta, cook until almost tender and drain
- 1 Tbsp. olive oil
- 1 Tbsp. chopped garlic
- 1 small onion, chopped
- 1 - small bag fresh spinach
- 1- 16 oz. bag of frozen Italian vegetables such as mixed zucchini, green beans, cauliflower, and broccoli
- 1- 14 1/2 oz. can diced tomatoes
- 1 cup raw small elbow macaroni
- 5 1/4 cup vegetable broth
- 2 cups water
- 1/2 Tbsp. sea salt
- 1/2 Tbsp. fresh black pepper
- 1-19 oz. can canellini beans, or garbanzo beans rinsed
- 2 Tbsp. fresh chopped Italian parsley
- 1/2 cup shredded parmesan
Citrus Salad with star Anise

Simmer water with sugar and anise in a small saucepan for 1 minute
- 1/4 cup water
- 2 Tbsp. sugar
- 4 star anise or 1 teaspoon anise seeds
- 3 grapefruits
- 2 oranges
FARMER’S MARKET SALAD WITH ROASTED BUTTERNUT SQUASH

Preheat oven to 400 degrees F
- 1 , 2 lbs. butternut squash, peeled, seeded, cut into 1/2 inch cubes or 4 cups pre-pared butternut squash cubes (found in the produce section of the market)
- 1 Tbsp. olive oil
- Pinch of red pepper flakes
- 1/2 tsp. sea salt
- 2 Tbsp. orange juice
- 2 Tbsp. pomegranate juice
- 1 Tbsp. walnut oil or olive oil
- 1 Tbsp. water
- 1/2 tsp. each salt and fresh black pepper
- 1 bag Dole arugula salad mix
- 1/4 cup walnuts, chopped, toasted
- 1/2 cup pomegranate seeds (can use dried cranberries as well)
- 3 Tbsp. pomegranate molasses
Corn pudding recipe

Mix butter, and eggs. Add corn, sour cream, and muffin mix
- 1 stick of melted butter or margarine
- 2 eggs well beaten
- 8 oz sour cream
- 1 small corn muffin mix (Jiffy)
- 1 can (15 oz) whole corn - not drained
- 1 can (15 oz) creamed corn - not drained
Hot Cross Buns - Bread Machine

Put all ingredients except fruit into bread machine
- 1 egg, plus
- 1 egg yolk
- 3 ⁄4 cup milk
- 1 ⁄3 cup butter
- 6 tablespoons sugar
- 1 1⁄2 teaspoons lemon rind, grated (or 3 tablespoons of lemon juice)
- 3 ⁄4 teaspoon cinnamon
- 1 ⁄2 teaspoon nutmeg
- 1 ⁄4 teaspoon ground cloves
- 3 ⁄4 teaspoon salt
- 3 cups flour
- 1 tablespoon yeast
- 1 ⁄2 cup raisins or 1⁄2 cup candied fruit
- 1 ⁄2 cup icing sugar
- 1 tablespoon milk
- 1 ⁄2 teaspoon lemon juice
Waffles - Pumpkin Waffles

Combine 1st 8 ingredients and set aside
- 2 1/2 cups flour
- 1 tbsp baking powder
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 4 large eggs
- 2 cups buttermilk
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1 tsp vanilla
