- 1 1/2 cups rolled oats
- 3/4 cup unbleached all-purpose flour
- 2 Tbsp. pure cane sugar

- 1 cup unsweetened plant milk, such as almond, soy, coconut, or rice
- 3/4 cup mashed cooked or canned sweet potato
- 1/4 cup aquafaba (Aquafaba, the liquid in canned chickpeas, has an ideal protein composition for an egg replacer. Just strain and save the liquid)
- 1 Tbsp. cider vinegar
- 1 1/2 tsp. grated fresh ginger

Ziti - Lasagna style Baked Ziti

Cook Ziti Oven 400 degrees In a large pot at med-low heat; heat oil, add onion, salt, and pepper
- 1 lb ziti
- 1 tbsp olive oil
- 1 large onion diced
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1 lb ground beef (optional 1 can vege burger instead)
- 3 cloves garlic minced
- 1/3 cup chopped fresh oregano (optional)
- 1 jar (26 oz) pasta sauce
- 1/2 cup grated parmesan
- 1 container (15 oz) ricotta
- 1 pkg (10 oz) frozen spinach, thawed and squeezed to remove liquid

LINGUINE WITH FRESH TOMATO AND BASIL

- 1/3 cup thinly sliced fresh basil

Slow Cooker - Lentil Cauliflower Stew

Sort the lentils, discarding any stones or impurities
- 16 oz dried lentils
- 1 tbsp olive oil
- 1 large onion, chopped (about 2 cups of onion)
- 2 garlic cloves, chopped
- 1 lb. cauliflower, chopped into very small florets
- 2 leeks, white and green parts only, halved, washed carefully, and chopped)
- 2 large carrots, peeled and chopped
- 3 celery stalks, chopped
- 2 bay leaves
- 1 tbsp chopped fresh thyme or 1 tsp dried thyme
- 2 tsp kosher salt (or to taste)
- 1 tsp cumin
- 1/2 tsp cayenne (very spicy-- add 1/4 tsp or less for a milder flavor)
- 1/4 tsp black pepper
- 8 cups low sodium vegetable broth
