Dark Chocolate Apples with Cranberries and Almonds

- 2 large red or green apples
- 4 oz. dark chocolate
- 1/4 cup chopped almonds
- 1/4 cup chopped dried cranberries
Taco Filling - Ancho-Lime Lentil Taco Filling - Forks Over Knives

Ancho chile pepper, or dried poblano pepper; has mild to medium heat
- 2 3/4 cups water
- 1 1/4 cups brown or green lentils, rinsed and drained
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1 Tbsp. ground ancho chile pepper
- 2 tsp. dried oregano, crushed
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 2 limes

Apple Cranberry Crisp

Preheat oven to 350 degrees F
- Topping:
- 2 lbs. (about 6) Granny Smith or Pippin apples, peeled, cored and sliced
- 1/2 cup dried cranberries
- 1 Tbsp. lemon juice plus 1 Tbsp. water
- 2 Tbsp. sugar
- 1 Tbsp. flour
- 1 1/4 tsp. cinnamon
- 1 Tbsp. orange zest
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup flour (can use 1/4 cup of whole wheat plus 1/4 cup of white flour)
- 1/2 cup no trans fat margarine.
- 1 tsp. cinnamon
Grilled Fresh Pineapple

- 1 fresh, ripe pineapple
- 2 Tbsp. brown sugar
- 2 Tbsp. Rum
- 1 Tbsp. no Trans fat margarine

- 3 cups low-sodium vegetable broth
- 1 15-oz. can no-salt-added black beans, rinsed and drained
- 1 1/2 cups tricolor quinoa, rinsed and drained
- 1 fresh poblano chile pepper, seeded (if desired) and chopped
- 2 Tbsp. chili powder
- 1/2 tsp salt
- 1/4 cup snipped fresh cilantro
- 1/4 cup lime juice
- Grape tomatoes (optional)
LIME GLAZED ROASTED YAMS

- 2 yams, peeled and cut into 1-inch pieces
- 2 Tbsp. light butter or no trans fat margarine
- 2 Tbsp. brown sugar

- 5 cups rolled oats
- 4 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2 cup (4 sticks) unsalted butter, at room temperature
- 2 cup granulated sugar
- 2 cup brown sugar
- 4 eggs
- 2 tsp vanilla extract
- 24 oz semisweet chocolate chips
- 1 bar (8 oz) Hershey bar, grated (or milk chocolate)
- 3 cups chopped walnuts
Penne - Fresh Tomato and Garlic Penne
