I got this off of Vegetarian Times and made it with a veggie "meat loaf" and the gravy was EXCELLENT!!!
- 2 1/2 2 1/2 1/2 tbsps. butter
- 1/4 1/4 1/4 cup all purpose flour
- 1 1/2 1 1/2 1/2 cups vegetable broth
- 2 2 2 tbsps. soy sauce
- 1/4 1/4 1/4 tsp fresh ground black pepper
- 1/4 1/4 1/4 packed fresh parsley (optional)

Pre-heat the oven to 425°F
- 8 skinless, boneless chicken thighs (about 1 3/4 pounds), quartered
- Salt and pepper
- 1/2 cup plus 2 tablespoons vegetable shortening, chilled, divided
