Mama's German Chocolate Cake

Three-Cheese Mini Macs

Adjust the oven racks to the upper and lower thirds of the oven
- 1/2 lb elbow macaroni
- 1 1/2 tablespoon unsalted butter
- 2 tablespoons unbleached all-pupose flour
- 1 cup whole milk
- 4 oz aged white cheddar cheese, grated
- 4 oz Gruyère, grated
- 2 extra large egg yolks
- 1/4 cup freshly grated Parmigiano-Reggiano Cheese

- Ingredients
- 4 cups low-sodium vegetable stock
- 1 1/2 cups water
- 2 (14.5 oz) cans diced tomatoes
- 1 cup diced celery (3 stalks)
- 1 cup diced carrots (2 carrots)
- 1 cup diced yellow onion (1 small)
- 1 Tbsp chopped fresh parsley (or 1 tsp dried)
- 2 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp dried crushed rosemary
- 2 bay leaves
- 1/2 tsp sugar
- Salt and freshly ground black pepper, to taste
