Chicken Florentine Bowtie Pasta

1. Preheat oven to 350 degrees F
- 2 tablespoons extra virgin olive oil
- 1 cup finely chopped white onion
- 1 clove minced garlic
- 4 cups baby spinach leaves
- 2 cups cooked shredded chicken breast
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 Cups Philadelphia Cooking Creme
- 1 pound bowtie pasta or other small noodle
- 1 1/2 cups shredded mozzarella cheese

- 3 packages (3.4 ounces each) instant vanilla pudding mix
- 4 cups cold milk
- 1-1/2 teaspoons coconut extract
- 1 package (8 ounces) cream cheese, softened
- 1 can (20 ounces) DOLE® Crushed Pineapple in 100% Pineapple Juice, well drained
- 2 cups heavy whipping cream, whipped and sweetened
- 2 cups flaked coconut, toasted
