  • 2 tablespoons capers, 1 tablespoon roughly chopped, 1 tablespoon whole
  • 2 tablespoons piquante pepper juice
  • 1 tablespoon minced garlic, about 2 cloves
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon freshly cracked black pepper
  • Pinch kosher salt
  • Filling:
  • 1 tablespoon extra-virgin olive oil, divided
  • 1/2 pound ground beef (80/20 lean muscle to fat ratio)
  • 1/2 pound Italian turkey sausage, casings removed
  • 1/4 yellow onion, small diced, about 1/4 cup
  • 1 tablespoon minced garlic
  • Toppings:
  • 1/4 cup ricotta cheese
  • 1/4 cup sour cream
  • 8 ounces mozzarella, grated
  • 2 ounces hard salami, julienned
  • 1 tablespoon julienned basil leaves
  • 1 tablespoon chopped Italian parsley leaves
  • 4 green onions, thinly sliced
  • 2 tablespoons sliced pepperoncini, optional
  • Chips:
  • 3 cups canola oil
  • 1 package wonton wrappers, halved
