Roasted Marmalade Chicken

This dish ahs huge flavour, making it a real winner for a dinner party
- 1/4 cup (50mL) 3-Fruit or Seville Orange Marmalade
- 2 tbsp (25mL) balsamic vinegar
- 2 tbsp (25mL) Dijon mustard
- 1 tsp (5mL) chopped fresh rosemary
- 3 tbsp (45mL) vegetable oil
- 4 chicken breasts on the bone, skin-on
- Salt and freshly ground pepper
- 1 tbsp (15mL) unsalted butter
- 2 cups (500mL) thinly sliced onions
- 1 cup (250mL) chicken stock
Classic Crab Cakes With Lemon Mayo

You'll need 3 or 4 slices of white sandwhich bread with the crusts removed, for the bread crumbs
- Lemon Mayo:
- 1/2 cup (125mL) mayonnaise
- 2 tbsp (25mL) finely cohpped parsley
- 2 tsp (10mL) finely grated lemon zest
- 1 tbsp (15mL) lemon juice
- 1.5 tsp (7 mL) Dijon mustard
- Pinch cayenne
- Crab Cakes:
- 2 pkgs (200g each) frozen crabmeat, thawed
- 1.5 cups (375mL) soft bread crumbs
- 1/4 cup (50mL) mayonnaise
- 1 egg, beaten
- 2 tbsp (25mL) finely chopped chives
- 1 clove garlic, minced
- 1 tsp (5mL) finely grated lemon zest
- 1 tsp (5mL) Worcestershire sauce
- 1/4 tsp (1mL) freshly ground black pepper
- Pinch each cayenne and salt
- 2 tbsp (25mL) vegetable oil
- Garnish:
- 2 cups (500mL) baby arugula, washed and dried
- 2 cups (500mL) watercress (no tough stems), washed and dried
- 1 tbsp (15mL) olive oil
- 1 tsp (5mL) white wine viniger
- salt and freshly ground black pepper to taste
Stir-Fried Beef in Spicy Peanut Sauce

Inspired by African peanut stew and Mexican mole, this sauce gets its silky texture from smooth peanut butter
- 2 lbs (1kg) beef strip loin, thinly sliced
- 1/2 tsp (2mL) each salt and pepper, divided
- 2 tbsp (30mL) canola oil
- 1 cup (250mL) finely diced onion
- 1 tbsp (15mL) finely chopped garlic
- 1 can (796mL) Compliments Diced Tomatoes, drained
- 1 tbsp (15mL) finely chopped canned chipotle chilies
- 1.5 cups (375mL) Compliments Chicken Broth, 30% less sodium
- 1 cup (250mL) Compliments Balance Smooth Peanut Butter
- 2 tbsp (30mL) Compliments Cocoa
- 1 tsp (5mL) ground cinamon
- 1 tsp (5mL) ground cumin
- 2 cups (500mL) cooked rice, prepared according to package directions
Tuna & Caper Tomato Sauce with Spaghetti

- 3 tbsp (45mL) extra virgin olive oil
- 2 tbsp (25mL) fresh garlic, finely chopped
- 1/2 tsp (2mL) chili flakes, or to taste
- 2 tbsp (25mL) capers, drained
- 1/4 cup (50mL) tomato paste
- 1/2 cup (125mL) white wine (optional)
- 2 tins (198g each) tuna in oil, drained
- 1 tsp (5mL) anchovy paste (optional)
- 2 cans (796mL each) diced tomatoes with juices
- 1 tsp (5mL) salt, or to taste
- 2 tbsp (25mL) fresh parsley, finely chopped
- 1 lb (500g) spaghetti

- Vanilla Rum Barbecue Sauce
- 1 tbsp (15mL) butter
- 1 onion, finely chopped
- 1/2 cup (125mL) dark or amber rum
- 1 vanilla bean, split
- 1 cup (250mL) packed brown sugar
- 1 cup (250mL) cider vinegar
- 1/3 cup (75mL) fancy molasses
- 1/2 tsp (2mL) freshly grated nutmeg
- 1/2 tsp (2mL) freshly ground black pepper
- 1/2 tsp (2mL) salt
- 4 lbs (2kg) boneless pork shoulder blade roast
- 1/4 cup (50mL) packed brown sugar

- 1 pkg (14g) dried porcini mushrooms (optional)
- 6 strips bacon, thinly sliced
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 lbs (1kg) potatoes, preferably Yukon Gold
- 2 cups (500mL) milk, 2% or homogenized
- 1 cup (250mL) whipping cream
- Pinch of nutmeg

Chunky Chicken and Chorizo Chili

Heat a big, deep skillet over medium high heat with 1 tablespoon extra virgin olive oil
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 3/4 pound chorizo, chopped
- 2 pounds ground chicken (or turkey)
- 3 tablespoons chili powder, 3 palm fulls
- 1 tablespoon ground cumin, a palm full
- 1 onion, chopped
- 3 cloves garlic, finely chopped
- 1 red bell pepper, chopped
- 1 (15-ounce) can red beans, drained
- 1 bottle beer
- 1 (28-ounce) can diced fire roasted tomatoes
- Salt
- 6 cups chicken stock
- 2 cups quick cooking polenta
- 2 tablespoons butter
- 2 scallions, finely chopped
- 2 tablespoons freshly chopped thyme leaves
- Can add Habanero peppers.
