- 1 box of penne pasta
- 1 stick of butter
- 2 garlic cloves, chopped
- 1/2 cup of flour
- 1/2 cup of white wine
- 1 can of evaporated milk
- 4 cups of milk
- 1 tablespoon of paprika
- 2 tablespoons of Dijon mustard
- 1/4 teaspoon of cayenne pepper
- 8 ounces of cheddar cheese, grated
- 8 ounces of Monterrey jack cheese, grated
- Salt and pepper
- 2 x1 pound lobsters, cooked and shelled
- 2 cups of breadcrumbs
Roasted Chicken with Peanut-Chili Glaze

Shepherd's Pie

This is a very flavourful shepherd'spie, originally a Scottish dish made with ground lamb
- 1 tbsp (15mL) vegetable oil
- 1 cup (250mL) chopped onion
- 1/2 cup (125mL) chopped celery
- 1/2 cup (125mL) chopped carrots
- 1 cup (250mL) chopped rutabaga or turnip
- 1 lb (500g) lean ground beef
- 1 tsp (5mL) chopped garlic
- Pinch cayenne
- 2 tsp (10mL) chopped fresh thyme
- Salt and freshly ground pepper
- 1 bay leaf
- 1 tbsp (15mL) flour
- 1.5 cups (375mL) beef or chicken stock
- 1 cup (250mL) chopped canned tomatoes
- 1 tbsp (15mL) Worcestershire sauce
- 1 tbsp (15mL) soy sauce
- 1 tsp (5mL) tomato paste
- TOPPING
- 1.5 lbs (750g) Yukon Gold potatoes, peeled and quartered
- 1/4 cup (50mL) butter
- 1/4 cup (50mL) milk
- 3 tbsp (45mL) dry bread crumbs
Mushroom Asparagus Risotto with Crisped Chicken

This risotto is a delicious yin-yang combination of creamy rice and crispy chicken
- 4 cups (1L) chicken broth
- 1 tbsp (15mL) butter
- 3/4 cup (175mL) finely diced sweet onion, such as Vidalia
- 1.5 cups (325mL) arborio rice, about 8 oz (250g)
- 1/2 cup (125mL) dry white wine
- 1/4 to 1/2 tsp (1 to 2mL) salt
- 4 oz (125g) cremini or button mushrooms, thinly sliced
- 1/2 lb (250g) fresh asparagus, thinly sliced on the diagonal
- 1/2 cup (125mL) freshly grated Parmesan cheese
- 1 tbsp (15mL) olive oil or butter
- 1.5 to 2 cups (375 to 500mL) shredded cold cooked chicken
- 2 tbsp (25mL) chopped fresh parsley

- 1/4 cup Long's dried porcini or other mushrooms
- 1/2 cup boiling water
- 1/4 cup Long's salted butter
- 2 large Spanish onions, thinly sliced
- 2 lbs wild mushrooms, such as shitake, cremini, oyster, king, chanterelle, trimmed and thinly sliced

- # 1 bunch of fresh dill, chopped
- # 4 green onions, sliced
- # 1 lemon, juiced and zested
- # 1 heaping spoonful of Dijon mustard
- # 1/4 cup capers
- # 8 ounces smoked salmon, or more (of the backyard smoked variety)
- # Sprinkled sea salt and freshly ground black pepper, to taste
