Chop walnuts into medium pieces, combine with raisins and set aside
- 2 cups grated green zucchini with skin
- 1 cup walnuts
- 1 cup raisins
- 3 1/2 cup flour
- 1 1/2 tsp. baking soda
- 3/4 tsp. baking powder
- 1 tsp. cinnamon
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp. vanilla
- 1 1/2 tsp. salt
Baked Ziti with Sausage and Tomatoes

Baked ziti in a hearty meat sauce is a great dish for hungry family; use either pork or turkey sausage
- 1 lb. sweet or hot Italian sausage
- 2 tbsp. olive oil
- 2 large onions, coarsely chopped
- 2 garlic cloves, peeled and finely chopped
- 1 28 oz. can chopped tomatoes with their juices
- 2 tbsp. chopped basil
- sale and freshly ground black pepper
- 1 lb. ziti
- 1/2 cup shredded mozzarella cheese

- 1/4 teaspoon ground nutmeg
- 3 eggs
- 1-1/2 cups shredded zucchini
- 1 cup vegetable oil
- 1 tablespoon vanilla extract
- 1 cup chopped fresh or frozen cranberries
- 1/2 cup walnuts
