Italian Bake Casserole

1. In large skillet, cook Italian sausage until slices are no longer pink, about 10 minutes
- 1 lb italian sausage links, sliced
- 3 c fresh sliced mushrooms (optional)
- 1 onion chopped
- 1 tsp minced garlic
- 2 can(s) 15 oz. italian stewed tomatoes
- 1 tsp italian seasoning
- 8 oz rotini pasta, cooked al dente, drained
- 1 8 oz pkg shredded mozzarella cheese, divided
- 1 2 oz can pitted ripe olives, halved ( optional)
- salt and pepper to taste
Stir Fried Bok Choy with Sesame Seeds

Place a large nonstick skillet over medium high heat
- 2 tbs. sesame seeds, raw
- 2 tsp. canola oil
- 1 tbs. ginger root, grated
- 2 tsp. minced garlic
- 6 cups bok choy, sliced crosswise 1/4 to 1/2 in. thick
- 3/4 tsp. Kosher salt
- 1/4 tsp black pepper or red pepper flakes
Rice Sausage Casserole

Prepare rice mixes according to package directions
- 1 packages (7.2 ounces each) rice pilaf
- 1 pounds bulk pork sausage
- 3 celery ribs, chopped
- 2 medium carrots, sliced
- 1/2 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 1/2 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1 teaspoons onion powder
- 1/4 teaspoon garlic powder
- 1/8 teaspoon pepper
Gingery Shrimp and Couscous

Heat the oil in a large skillet over medium heat
- 1 tablespoon olive oil
- 1 large yellow onion, finely chipped
- 3 cloves garlic, finely chopped
- 3 tablespoon finely chopped ginger
- 1 cup white wine
- 1 lb. shrimp, peeled and deveined
- 8 oz. snow peas, cut in half on the diagonal
- 1/3 cup fresh cilantro, roughly chopped
- 1/2 teaspoon kosher slat

Carrot Cake

Pre-heat the oven to 350 degrees
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2/1/2 teaspoon ground cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 6 egg whites
- 1-1/3 cup sugar
- 1 cup unsweetened applesauce
- 1/2 cup buttermilk
- 1-1/2 teaspoon vanilla

Spanish Shrimp

Heat a large skillet over medium heat
- 1 tbs. plus 1 teas. olive oil
- 2 medium yellow or white onions, each cut into eights
- (Spanish preferred)
- 3 cups red, yellow and green bell pepper strips
- 2 medium cloves garlic, chopped
- 1/2 lb. uncooked peeled and deveined medium shrimp
- 1/4 cup lime juice (2 to 3 medium limes)
- 1 tbs. snipped fresh cilantro
- 1/4 teas. crushed red pepper flakes
Spicy Buffalo Wing Balls

1. Melt 1 tbsp of the butter in a small saucepan over a low flame
- 2 lbs. ground chicken (preferably thigh meat)
- 1 stalk celery, minced
- 1 tbsp red wine vinegar
- 1 tbsp chile flakes
- 1/2 cup Frank's Red Hot Sauce
- 1 cup breadcrumbs
- 3 eggs

- 1 cup chopped fresh mushrooms

- 3 cups cottage cheese
- 2/3 cup grated Romano cheese
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1 teaspoon dried basil leaves
- 1/2 teaspoon ground black pepper
- 1 egg
- 3 cups shredded mozzarella cheese
- 3 cups tomato pasta sauce
- 1 cup grated Parmesan cheese
Pork and Mango Stir Fry

- 1 lb. lean pork tenderloin, thinly sliced

- 1/4 cup Chinese cooking wine or dry sherry

- 1-1/4 teas. Chinese five spice powder
- 1/2 teas. crushed red pepper flakes
- 1 large firm but ripe mange, peeled, pitted and cut
- into chunks
- 3 cups cooked brown rice
