- 1 tbs. milk
- 1 tbs. honey

- 3/4 cup packed light brown sugar
- 1/4 cup canola oil
- 2 large eggs
- 1 cup mashed ripe bananas (about 3 medium)
- 1-1/4 cups whole-wheat pastry flour
- 1 cup all-purpose flour
- 1-1/2 teaspoons baking powder
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

Dad's Meatloaf w/ Tomato Relish

Pre-heat oven to 350 degrees
- Tomato Relish:
- Extra Virgin olive oil
- 1 onion finely diced
- 2 garlic cloves, minced
- 2 bay leaves
- 2 red bell peppers, cored, seeded and finely diced
- 2 tomatoes, halved, seeded and thinly diced
- 1/4 cup chopped fresh flat-leaf parsley
- 1 (12 oz.) bottle ketchup
- 1 tablespoon Worcestershire sauce
- Sea salt and freshly ground black pepper
- Meatloaf:
- 3 slices white bread, crusts removed, torn into chunks
- by hand
- 1/4 cup whole milk
- 1-1/2 lbs. ground beef
- 1 lb. ground pork
- 2 eggs
- Leaves from 2 fresh thyme sprigs
- Salt and freshly ground black pepper
- 3 to 4 bacon slices

- 2/3 cup evaporated milk
- 2 large eggs
- 2 tbls. cornstarch
- 1/2 teas. ground cinnamon
- 1 cup crushed toffee candies
- 1 (8 oz) container sour cream, room temperature
- 2 tbls. sugar
- 1/2 teas. vanilla extract

- 1 tablespoons vegetable oil
- 1.5 lbs. pork sausage
- 1 medium onion, cut into 1/4 inch dice
- 1 red bell pepper, cut into 1/4 inch dice
- 3 garlic cloves minced
- 1 tablespoons tomato paste
- 1 tablespoons chili powder
- 1 tablespoons sweet paprika
- 1/2 tablespoon cumin seeds
- 1 tablespoon dried oregano
- 1 28 oz. can diced tomatoes
- 1 16 oz. can kidney beans, drained
- 1 cup corn kernels
- 2 cups water
- Kosher salt and freshly ground pepper
- Shredded cheddar cheese, sour cream, chopped
- onion, pickled jalapeño, and hot sauce, for serving

- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 carrot, peeled and grated
- 2 sprigs fresh thyme, left on stem
- 4 cups firmly packed chopped callaloo, spinach or greens
- 1 medium tomato, chopped 1/4 teas sea salt
- Coarsely ground black pepper

Chile Garlic Chicken Legs

1. In a large saucepan, heat oil over medium high
- 1 tablespoon vegetable oil
- 4 chicken legs (2 1/2 lbs) drumsticks & thighs separated
- 4 garlic cloves, finely chopped
- 3/4 cup white vinegar
- 1/2 cup soy sauce
- 1/2 teaspoon red-pepper flakes
- 1/4 cup sugar
Chicken and Vegetable Stir Fry

For sauce, in a small bowl, stir together all ingredients; set aside
- Sauce:
- 2 tbs. water
- 1 tbs. bottled low sodium stir fry sauce
- 1 teas. cornstarch
- 1 lb. boneless, skinless chicken breast
- 1 teas. vegetable oil
- 1 cup broccoli florets, cut into 1 inch pieces
- 1/2 cup sliced red bell peppers
- 1/2 cup thinly sliced carrots
- 1/2 cup no salt added canned baby corn, rinsed and
- drained, and cut into bite sized pieces
- 2 green onions, sliced (about 1/4 cup)
- 1 teas. bottled minced garlic or 2 medium cloves garlic
