Cube the feta. Rinse and halve the tomatoes
- 6 oz. feta cheese
- 1 cup yellow cherry tomatoes
- 1 cup red cherry tomatoes
- 3 to 4 scallions
- 1/2 cup loosely packed mint leaves
- 1/4 cup freshly squeezed lemon juice
- 2 garlic cloves
- 1/2 cup extra-virgin olive oil
- 1/4 tsp. salt
- Freshly ground pepper
- 2 Tbs. rice vinegar
- 1 to 2 Tbs. honey
- 3 cups fresh peas
Red Potato Soup

In a large pot, boil the potatoes in water for 10 minutes
- 2 1/2 pounds red potatoes; cut into bite-sized pieces
- 1/2 pound bacon; finely diced
- 1 medium onion; diced
- 4 celery stalks; diced
- 8 cups milk
- 3 cups water
- 4 chicken bouillon cubes; dissolved in 1 cup of potato water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3/4 cup butter
- 3/4 cup flour
- 1/4 cup fresh chopped parsley
- 1 cup whipping cream
- shredded cheddar cheese
- chopped green onions
