Spread 1 tablespoon spaghetti sauce over cut side of each bagel half top each evenly with remaining ingredients
- 1 ¼ cups commercial no-salt-added spaghetti sauce
- 10 (1-ounce) frozen mini-bagels, thawed, split, and toasted
- ½ cup finely chopped Canadian bacon (¼ pound)
- 1 cup (1 ounce) finely shredded part skim mozzarella cheese
- Optional: You can add other veges, or "stuff" that you like on your pizza

Cheater Beans

In a large saucepan, fry the bacon over medium heat for 3 to 4 minutes
- 4 strips bacon, cut into 1/4-inch slices
- 1/4 medium onion, finely diced
- Two 27-ounce cans pinto beans
- 2 serrano peppers, scored
- 1 medium tomato, finely diced
- 2 cloves garlic, minced
- Salt and pepper
- 1/4 bunch fresh cilantro (don't use the stems and don't chop, just snip or pinch off the leaves)

Plum Glazed Hens

- 4 large navel oranges, sliced
- 4 Cornish game hens (20 to 24 ounces each), split lengthwise
- 1/4 tsp. pepper
- 1 can (15 ounces) plums, pitted, drained
- 1/4 cup finely chopped onion
- 1/4 cup butter, cubed
- 3/4 cup thawed lemonade concentrate
- 1/3 cup chili sauce
- 1/4 cup soy sauce
- 1-1/2 tsps. prepared mustard
- 1 tsp. ground ginger
- 1 tsp. Worcestershire sauce
- 1/4 cup flaked coconut, toasted, optional
Tangy Asian Meatballs

Serve these meatballs on a bed of rice, with Snow Peas on the side
- 1 pound ground pork
- 1/3 cup panko bread crumbs
- 3 scallions, white and light-green parts, chopped
- 1 large egg
- 1 tablespoon soy sauce
- 1 tablespoon finely chopped fresh ginger
- 2 cloves garlic, finely chopped
- 1/2 cup barbecue sauce
- 1/4 cup jarred Chinese plum sauce or duck sauce
- 2 tablespoons hoisin sauce

- 8 lasagna noodles, cooked
- 1 (10 ounce) package Green Giant frozen chopped spinach, thawed and well drained
- 1 (15 ounce) container ricotta
- 1/2 cup Parmesan cheese
- 1 egg
- 1/2 teaspoon minced garlic
- 1/2 teaspoon Italian seasonings
- salt and pepper, if desired
- 1 (15 ounce) can Muir Glen organic pizza sauce
- 1 cup shredded mozzarella cheese

- 1 teaspoon grated lemon peel
- 1 tablespoon fresh lemon juice
- 1/2 cup low-fat ricotta cheese
- 3/4 cup non-fat plain yogurt
