Rum Butter Sauce (for Mince Pie)

In sauce pan, combine sugar, salt, syrup, butter, ½ cup cream
- 3/4- Cup Granulated sugar
- 1/8 tsp. Salt,
- ½ cup white Karo
- ½ Cup butter or margarine
- 1 Cup Light cream
- ½ tsp. Vanilla
- Rum to taste (either the real thing or flavoring)
Turtle Rock Tortilla Soup

Combine broth, cumin, garlic, chili powder and tortillas in a large, heavy pot
- 1 gallon chicken broth
- 1 T ground cumin
- 2 Tbsp chopped garlic
- 2 Tbsp chili powder
- 5 corn tortillas, toasted
- 2 pounds diced, raw boneless chicken
- 1 cup crushed tomatoes, juice included
- 1 cup diced onion
- 1 can (16 oz) black or pinto beans
Vegetable Party Bouquet

Cut off ends of each radish
- For the base:
- 1 large head of cabbage
- For the Bouquet
- 1 bunch radishes
- 1 yellow bell pepper
- 1 orange bell pepper
- 5 medium carrots
- 2 bunches green onions
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 cucumber, sliced into small rounds
- 1 pint cherry tomatoes
Quick Dip

Mix all ingredients together
- 1 envelope spaghetti sauce mix
- Diced green chilis to taste
- 1 pint sour cream
Fruit Salad Basket

Lay a dampened towel on the counter top or table and place watermelon on top to prevent it from rolling around
- Special aids:
- large watermelon (about 15 pounds)
- 2-cantaloupe melons
- 2-honeydew melons
- 1/2-cup white granulated sugar
- 1/2-cup lime juice
- 1/4-cup lemon juice
- 2-Tbsp. orange-flavored liqueur (optional)
- 2-tsps. grated lime peel
- 2-cups fresh strawberries, washed, hulled and cut in half
- 2-cups red seedless grapes, washed and cut in half
- water-soluble marker
- melon baller
- vegetable peeler and sharp knife
Mexican Onion Soup

- 5 medium-size yellow onions, thinly sliced (about 3 pounds)
- 4 (14 1/2-ounce) cans chicken broth, divided
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 2 (14 1/2-ounce) cans beef broth
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 2 tablespoons ground chipotle pepper
- 1 1/4 cups (5 ounces) shredded Monterey Jack cheese with peppers

- 1/3 cup chopped fresh cilantro
Ginger Fruit Salad

Toss all the fruit together, and add the lime juice, lime zest, mint, and 1/4 cup of ginger simple syrup
- For the Fruit Salad:
- Ginger Fruit Salad
- 2 cups Pineapple (cubed)
- 4 Kiwi (peeled and sliced into rounds)
- 2 cups Cantaloupe (cubed)
- 2 cups Honeydew Melon (cubed)
- Zest and Juice of 2 Limes
- 1/2 cup Mint Leaves (torn)
- 1/4 cup Ginger Simple Syrup
- For the Ginger Simple Syrup:
- 1 cup Sugar
- 1 cup Water
- 1 large piece Ginger (peeled and sliced into thin rounds)
Focaccia, Speedy Kind

This is not from scratch, but is supposed to be very good
- 1 can Pillsbury biscuit or
- crescent rolls from the can.
- Olive Oil
- Garlic Salt
- Black Pepper
Mystery Fruit Salad

Sprinkle pudding powder over fruit and stir
- 2 tablespoons dry instant vanilla pudding mix
- 1 pound of strawberries, quartered
- 1/2 pint blueberries
- 1/2 pint raspberries
- 1/2 pineapple, cubed
- 1 bunch grapes
Lemon Sole

Preheat 2 medium non-stick skillets over medium-low heat for 5 minutes
- Four 4-ounce skinless sole or flounder fillets
- Kosher salt and freshly ground black pepper
- Flour for dredging
- 5 tablespoons cold unsalted butter, cut into tablespoon-sized pieces
- 2 tablespoons freshly squeezed lemon juice
- 2 teaspoons water
- 1 teaspoon minced flat-leaf parsley leaves
- 1 teaspoon minced fresh thyme leaves
