Sausage Chili

In a large heavy pot, heat the oil over medium-high heat
- 1 tablespoon vegetable oil
- 2 pounds Andouille, or other spicy, smoked link sausage, cut into 1/2-inch pieces
- 2 cups chopped yellow onions
- 1 tablespoon minced garlic
- 2 tablespoons chili powder
- 1 tablespoon Essence, recipe follows
- 2 teaspoons ground cumin
- 1 (12-ounce) bottle dark beer
- 1 (28-ounce) can whole tomatoes, crushed, and their juices
- 3 tablespoons tomato paste
- 1 teaspoon sugar
- 6 cups cooked red kidney beans, drained and rinsed
- Salt and freshly ground black pepper
- 1 cup grated cheddar cheese, garnish
- 1 cup finely chopped green onions, garnish
Fudge, 7 minute Pecan

In heavy saucepan combine first four ingredients together
- 1 pkg (4 oz) chocolate pudding and pie filling mix (NOT instant)
- 1 pkg 4 1/2 oz vanilla pudding and pie filling mix (NOT instant)
- 1 cup evaporated milk
- 2 cups sugar
- 2 pkgs (6 oz each) semisweet chocolate bits
- 2 cups miniature marshmallows
- 2 tsp vanilla
- 3 cups pecans
Mildred's Apple Crisp

This is an old recipe of Mildred Couts, our neighbor on Kennebec in Akron
- 8 sliced apples
- 3/4 cup sugar
- 1/2 cup water
- 1/2 cup flour
- 6 Tbsp butter
- Cinnamon
Ginger Garlic Sea Bass in Parchment

Preheat oven to 375 degrees F
- • Parchment paper
- • 4 (6 to 7-ounce) portions sea bass
- • Salt and freshly ground black pepper
- • 1 bunch scallions, cut into 3-inch pieces on an angle
- • 1/2 pound shiitake mushrooms, stemmed and sliced
- • 3 to 4-inch knob ginger, peeled and thinly sliced
- • 4 large cloves garlic, peeled and thinly sliced
- • 3 tablespoons honey
- • 2 tablespoons rice wine vinegar
- • 3 tablespoons tamari sauce
On the Border Guacamole

Mix all ingredients together and stir well
- 2 fresh avocados
- 1 lime wedge
- 1/2 tsp. salt
- 2 Tbs. diced tomato
- 1 1/2 Tbs. fresh jalapenos, diced fine
- 1 Tbs. red onion, diced fine
- 1 tsp. chopped cilantro
Salad, Guacamole

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl
- • 1 pint grape tomatoes, halved
- • 1 yellow bell pepper, seeded and 1/2-inch diced
- • 1 (15-ounce) can black beans, rinsed and drained
- • 1/2 cup small diced red onion
- • 2 tablespoons minced jalapeno peppers, seeded (2 peppers)
- • 1/2 teaspoon freshly grated lime zest
- • 1/4 cup freshly squeezed lime juice (2 limes)
- • 1/4 cup good olive oil
- • 1 teaspoon kosher salt
- • 1/2 teaspoon freshly ground black pepper
- • 1/2 teaspoon minced garlic
- • 1/4 teaspoon ground cayenne pepper
- • 2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced
Peach Cobbler

- •1 Can(s) CREAM OF CHICKEN SOUP
- •2 Cup(s) SOUR CREAM
- •1/2 Teaspoon(s) SALT
- •2 Cup(s) CHEDDAR CHEESE shredded
- •1/3 Cup(s) GREEN ONIONS sliced
- •1/4 Teaspoon(s) BLACK PEPPER ground
- •2 Cup(s) CORN FLAKES crushed
- •1/4 Cup(s) BUTTER melted
One-Pot Chicken and Sausage

Brown sausage in nonstick skillet (8 minutes)
- 1/2 lb italian sausage links, cut diagonally into thirds
- 4 skinless chicken breast halves on the bone (approx
- 2-1/2 lbs)
- 2 tsp olive oil
- 3 cloves garlic, chopped
- 1 tsp dried rosemary
- 1 lb small red potatoes, unpeeled, cut into quarters
- 3 Tbs water
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup dry white wine
- 3 Tbs balsamic vinegar
- 2 small sweet red peppers, cut into 1" squares
