Brown beef and onions until done; drain
- 1 lb. ground beef
- 1/2 sm. onion, chopped
- 1 can kernel corn, drained
- 1 pkg. mashed potatoes
- 1 pkg. shredded cheddar cheese
Bruschetta from Olive Garden

Toss diced tomatoes with basil, garlic, olive oil, vinegar, and salt in a medium bowl
- 3 firm Roma tomatoes, finely diced (about 1 1/2 C.)
- 1 Tbs. minced fresh basil
- 2 tsp. minced garlic
- 1 tsp. extra virgin olive oil
- 1 tsp. balsamic vinegar
- 1/4 tsp. salt
- 9-10 slices ciabatta bread (or Italian bread)
- 1 Tbs. grated parmesan cheese
- Pinch dried parsley flakes
Broccoli Gratin

• Place a rack in the middle of the oven and preheat to 450 degrees F
- 1/4 cup unsalted butter, plus more for the baking dish
- 3 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1 1/2 teaspoons kosher salt, plus more as needed
- Pinch freshly grated nutmeg
- Freshly ground black pepper
- 2 pounds broccoli (about 4 heads), cut into small florets (about 8 cups)
- 1 cup grated sharp Cheddar (about 4 ounces)
- 1/2 cup fresh bread crumbs

Preheat oven to 425 degrees F (220 degrees C)
- 1 1/2 pounds russet potatoes, cut into 1/2-inch wedges
- 1 1/2 tablespoons vegetable oil
- 1 teaspoon Mexican-style seasoning blend
- 1/2 teaspoon garlic salt
- 1 cup shredded Mexican cheese blend
- 1/4 cup rinsed and drained canned black beans
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup sliced green onions
- 3 tablespoons canned chopped green chiles

Heat oven to 400°F. Coat deep-dish 9-inch pie plate with nonstick cooking spray
- 1 sweet yellow pepper, diced
- 3/4 pound ground beef
- 1 clove garlic, finely chopped
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
- 1/2 tsp. dried tarragon
- 1/2 tsp. dried thyme
- 1 cup canned French-fried onions
- 1-1/2 cups shredded Swiss cheese
- 2 eggs
- 1-1/4 cups milk
- 1 Tbsp. Dijon-style mustard
- 1 cup reduced-fat buttermilk baking mix

- Ingredients
- 1 pound fregola or orzo pasta, or Israeli couscous
- 1/4 cup extra-virgin olive oil
- 2 cups (about 10 ounces) cipollini onions, peeled and halved, or quartered if large
- Kosher salt and freshly ground black pepper
- 3 cloves garlic, minced
- 1 pound broccoli, cut into small florets
- 1/3 cup water
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1/2 cup grated Parmesan
- Dressing:
- 2 large lemons, zested and juiced
- 1/2 cup extra-virgin olive oil
- 2 tablespoons honey
- 3 1/2 teaspoons kosher salt, divided
- 1 1/4 teaspoons freshly ground black pepper, divided
- 1 cup (about 1 ounce) chopped fresh chives
Enchil-lasagna from leftover Meatloaf

This was part of a Rollover segment on Rachael Ray's road
- 1 Turkey Stuffin’ Meatloaf, thinly sliced
- 2 cups reserved gravy, from the night before
- 1 jar mild green chili pepper salsa
- 8 whole wheat tortillas
- 1 box frozen corn (10 ounces), defrosted
- 1 can black beans (15 ounces), rinsed and drained
- 4-5 scallions, chopped
- 2 1/2 cups Monterey Jack or pepper Jack cheese
Meatloaf, Barbecued

This was at one time a favorite recipe of mine
- 3 pounds ground chuck or round
- 1 clove garlic, mashed
- 1 large onion, finely chopped (1 cup)
- 1 teaspoon leaf oregano, crumbled
- 1 . Teaspoon leaf basil, crumbled
- 1/2 teaspoon leaf savory, crumbled
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 cups packaged bread crumbs
- 1 1/2 teaspoon liquid hot pepper seasoning
- 1 teaspoon Worcestershire sauce
- 1/2 cup brewed strong coffee
- 1/4 cup dry red wine
- 1/2 teaspoon sugar
- Dairy sour cream (optional)
Salmon (or Tuna) Souffle

- 1 tall can salmon o9r 2 cans tuna
- 1/3 cup bread crumbs
- 1/3 cups sour cream
- 3/4 stick margarine, melted
- 1/4 tsp baking powder
- 2 Tbsp grated onion
- 3-4 large eggs, separated.
