- 2 1/2 pounds lean beef stew meat, cut in 1-inch cubes
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, cut in 1-inch slices
- 2 ribs celery, cut in 1/2-inch slices
- 2 medium potatoes, cut in 1-inch cubes
- 1 cup beer
- 1 cup beef broth, or use all beer
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon oregano
- 2 tablespoons tomato paste
- 3 tablespoons melted butter
- 1/3 cup flour

- 4 4 4 tbsp. white corn syrup
- 1/3 1/3 1/3 c. butter

- Boil until hard crack stage. Pour out onto pie tin and break when cool.

- 4-slices crisp cooked bacon crumbled
- 2 hard-cooked eggs, chopped or wedged
- 1 cup croutons
- 1 cup shredded Jack cheese
- 1 cup chopped onions
- 1 tablespoon oil

- o 1/4 teaspoon ground cumin
- o 8 10-inch fat-free whole-wheat tortilla
- o 2 cups (8 ounces) shredded reduced-fat Monterey Jack cheese
Cinnamon-Apricot Glazed Salmon

These broiled salmon fillets will be swimming pretty in this tasty ginger, soy, cinnamon-apricot sauce
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon minced peeled fresh ginger
- 2 (3-inch) cinnamon sticks
- 1 (12-ounce) can apricot nectar
- 4 (6-ounce) salmon fillets (about 1 inch thick)
- Combine the first 4 ingredients in a saucepan, and bring to a boil. Reduce heat and simmer mixture until reduced to 3/4 cup (about 30 minutes). Strain the apricot mixture through a sieve over a bowl, and discard solids.

- 1 package, 10 ounces, frozen chopped spinach
- 2 tablespoons butter
- 12 small mushroom caps, crimini or button
- 2 cloves garlic, cracked
- 1 small shallot, quartered

- 1 cup part skim ricotta cheese
- 1/2 cup grated Parmigiano or Romano, a couple of handfuls
- 1/2 teaspoon fresh grated or ground nutmeg
