Preheat oven to 350 degrees F
- 1 medium spaghetti squash (about 3 pounds)
Preserved Lemon Chicken

- 2 tablespoons oil
- 8 chicken thigh fillets, trimmed and halved
- 2 onions, chopped
- 2 cloves garlic, chopped
- 1 teaspoon fresh gingerroot, chopped
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1 cup chicken stock
- 1/4 cup lemon juice
- 4 pieces preserved lemons, rinsed, flesh discarded
- 1/2 cup pitted green olives
- 1 tablespoon chopped fresh parsley
Meatloaf Cupcakes

The "icing" for these meatloaf cupcakes is mashed potatoes
- Meatloaf
- 1 teaspoon olive oil
- 1 cup finely chopped onion
- 1/2 cup finely chopped carrot
- 1 teaspoon dried oregano
- 2 garlic cloves, minced
- 1 cup ketchup, divided
- 1 1/2 pounds ground beef, extra lean (raw)
- 1 cup bread crumbs
- 2 tablespoons prepared mustard
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon freshly ground black pepper
- 2 large eggs
- Cooking spray
- Mashed Potatoes
- 4 cups cubed peeled Yukon gold potato (about 2 pounds)
- 1/4 cup 2% reduced-fat milk
- 1/4 cup low-fat sour cream
- 3 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Garnish
- 3 tablespoons chopped chives
- 4 pieces of bacon cooked and them chopped
Vegetable Broth, Fresh

A good base for soup; can be used instead of or with chicken or beef broth
- 10 cups water
- 8 white mushrooms, halved
- 4 medium-sized new red
- 1 medium-sized onion, unpeeled
- 2 carrots, unpeeled and cut large chunks
- potatoes, halved, studded with 4 whole cloves
- 8 fresh parsley sprigs
- 2 cloves of garlic, unpeeled
- 2 leeks, trimmed and cut into large chunks
- 2 fresh dill sprigs
- 1 bay leaf
- 2 celery ribs with leaves
- 2 medium-sized tomatoes
- 8 black peppercorns
- 1 teaspoon coarse salt
Crispy Potato Skins

Preheat oven to 450 F. Spray a baking sheet with vegetable cooking spray
- 4 medium russet potatoes, scrubbed
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper

Strawberry Angel Food Dessert

Prepare cake mix as directed on package, baking in 10" tube pan
- 1 pkg angel food mix
- 2 boxes (10 oz each) frozen sliced strawberries
- 1 box strawberry jello
- 1/2 cup sugar
- 1 cup hot water
- 1 cup heavy cream, whipped
- Whole fresh strawberries, washed and hulled

- 2 cup Potatoes (grated)
- 1 Onion (very thinly sliced)
- 1 cup Monterey Jack Cheese (grated)
- Oil for frying
- 2 tablespoon chopped scallions
- 1/4 cup ketchup
- 1 tablespoon hot sauce
Butterscotch Pie Filling

This was an old recipe that Aunt Dorothy gave me
- Large chunk of butter, let brown
- Add 1 ½ cup brown sugar and let brown well
- Add 8 Tbsp milk, boil 5 minutes
- 2 big cups milk, heat to boiling point.
- Thicken with 3 egg yolks, 4 T cornstarch, thin with milk. Put beaten whites on top, brown.
Apricot Beef Stir-fry

There is a lot of flexibility in this recipe
- 4 oz. linguine
- 2 Tbsp soy sauce
- 2 tsp cornstarch
- 1/4 tsp salt
- 2 Tbsp packed light brown sugar
- 2 Tbsp oil, divided
- 1 # sirloin steak, cut into 1" thick chunks
- 1 red onion, halved and cut into thin wedges
- 1 red pepper, cut into thin strips
- 2 tsp minced fresh ginger
- 1 can (15 1/2 oz) apricot halves, drained, cut into wedges
- Optional: snow peas and/or water chestnuts
Vegetables, Oven Roasted (Mad Hungry)

- " 4 medium beets, cleaned, trimmed, and quartered
- " 8 ounces cremini mushrooms, trimmed and wiped clean, large ones halved
- " 5 shallots, peeled and halved
- " 1/4 cup extra-virgin olive oil
- " 1 tablespoon coarse salt
- " Coarsely ground black pepper
