Forgotten Meringues

Add sugar to egg whites gradually, keep beating until stiff
- 2 egg whites, beaten stiff
- 3/4 cup sugar
- 1 cup broken nut meats
- 1 package chocolate bits
Noodle Soup, Teakettle

In a large single-serving bowl, sprinkle in the chicken seasoning from the ramen package
- 1 package ramen, chicken flavor
- 1 tablespoon sriracha
- 1/4 cup shredded carrots
- 1 green onion, sliced
- One 3.325-ounce can straw mushrooms, drained
- One 15-ounce can baby corn, drained
- 2 cups boiling water
- Juice of 1/2 lime
- 2 tablespoons chopped salted peanuts
Baked Taco Casserole

(I first made this when mom came home from the hospital after her back surgery)
- 2# ground beef
- 1 C. Chopped onion
- 2 cloves garlic, minced
- 1 1/2 tsp salt 1/4 tsp pepper
- 2-10 oz cans enchilada sauce
- 1 -15 oz can tomato sauce (2 cups)
- 1 -Tbsp instant coffee crystals
- 24 fresh corn tortillas
- 1 - 8 oz pkg cream cheese, softened
- 1 cup water
- Shredded sharp American cheese (12 oz)
Rhubarb Upside Down Cake

- For The Topping
- 4 tablespoons unsalted butter, melted
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- Coarse salt
- For The Cake
- 1 1/2 sticks unsalted butter, room temperature, plus more for buttering pan
- 1 pound rhubarb, trimmed and cut on a very sharp diagonal about 1/2 inch thick
- 1 3/4 cups sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- Coarse salt
- 1/2 teaspoon finely grated orange zest plus 1 tablespoon fresh orange juice
- 2 large eggs
- 1 cup sour cream

Beet, Carrot, Watercress Salad

Place beets in a medium-sized saucepan with the vinegar and a large pinch of salt
- 4 medium-sized beets
- 1/2 cup sherry vinegar
- Coarse salt
- 1 tablespoon vegetable oil
- 4 small carrots, peeled and cut on the diagonal, 1/4-inch thick
- 2 tablespoons sugar
- 1 bunch watercress, washed and well-dried, bunch separated and thick stems removed
- 3 radishes, thinly sliced
- Freshly ground pepper
- Extra-virgin olive oil
Spaghetti Pie, Baked

Preheat oven to 375. Brown ground beef, drain and mix with spaghetti sauce
- 1 box spaghetti, cooked al dente
- 4 eggs
- 1 stick butter or margarine
- 1 container parmesan cheese, grated (6 oz)
- 1 large container cottage cheese
- 1 pound ground beef
- 1 jar spaghetti sauce
- Mozzarella cheese
- (There is another recipe for baked spaghetti that calls for 8 oz Velveeta, 4 oz cream cheese and 4 oz mozzarella. Could adapt that combination to this recipe, putting all on as with the mozarella alone)
Crockpot Chocolate Candy

- 2 lbs (36 oz) salted dry-roasted peanuts
- 4 oz (4 squares) German's sweet chocolate
- 1 12-oz package semisweet chocolate chips (about 2 cups)
- 2 1/2 lbs white almond bark
Roasted Beet and Parmigiano Bruschetta

- 1 pound beets
- 1 Tbsp. balsamic vinegar
- 3 Tbsp. olive oil
- 1 tsp. caraway seeds
- 1 tsp. fresh chives
- 8 slices of crusty bread
- Parmigiano-Reggiano
- Salt and pepper
Pecan Pie Surprise Bars

Heat oven to 350. Grease 13 x 9 inch pan
- 1 (18 ounce) packageyellow cake mix OR 1 (18 ounce) package butter recipe cake mix
- 1/3 cup margarine or 1/3 cup butter, softened
- 1 egg
- Filling
- 1/2 cup firmly packed brown sugar
- 1 1/2 cups dark corn syrup
- 1 teaspoon vanilla
- 3 eggs
- 1 cup chopped pecans

Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes
- 1 hothouse cucumber, halved and seeded, but not peeled
- 2 red bell peppers, cored and seeded
- 4 plum tomatoes
- 1 red onion
- 3 garlic cloves, minced
- 23 ounces tomato juice (3 cups)
- 1/4 cup white wine vinegar
- 1/4 cup good olive oil
- 1/2 tablespoon kosher salt
- 1 teaspoons freshly ground black pepper
