- If you can't recall when you bought that carton of eggs
- to want to make sure they're still fresh, place them gently into a bowl of water. Rotten eggs will float, and the fresh ones will stay fully submerged. The fresher they are, the more quickly they will sink.

Cinnamon Sugar Flour Tortilla Crisps

Cut each flour tortilla into 6 to 8 wedges or use a cookie cutter to cut out shapes in the tortillas
- 1/4 cup sugar
- 1 1/2 teaspoons cinnamon
- 4 Tbsp butter, melted
- 2 flour tortillas
- Note: You may want to double up on the amount of cinnamon sugar and butter just to make it easier for dipping and dredging.
Chinese Chicken Salad

Mix all Dressing ingredients it bowl
- Dressing
- About ½ cup unsweetened pineapple
- drained from 1 can (8 ounces)
- packed pineapple chunks
- 1/4 cup soy sauce
- 2 tablespoons vegetable oil
- 2 tablespoons lemon Juice
- 1 tablespoon grated peeled fresh gingerroot
- 1/2 teaspoon minced garlic
- 1/2 teaspoon oriental sesame oil
- 2 1/2 cups strips cooked chicken
- 8 ounces snow peas, trimmed and blanched
- 4 ounces (2 cups) mung bean sprouts
- 1 cup drained canned Juice-packed pineapple chunks
- Optional: water chestnuts to taste

- 2 pounds fresh or frozen medium shrimp, peeled and deveined, leaving tails intact
- 1/4 cup olive oil
- 3 tablespoons finely chopped onion
- 5 cloves garlic, minced
- 1/4 cup tequila
- 1/4 cup lime juice
- 2 tablespoons snipped fresh cilantro

Mexican Pizza

Preheat oven to 350 degrees
- Approx 1/2 lb ground beef or ground turkey
- 1/2 TBSP taco seasoning
- 1/4-1/2 cup re fried beans
- 1/4-1/2 cup salsa ( jarred or homemade)
- 1/4-1/2 cup shredded cheddar cheese (or your desired flavor)
- 2- 4 in flour tortillas
- your choice of toppings, ex: tomatoes, green onions, olives

- All-Purpose Baking Mix:
- 4 zucchini
- 1 cup Baking Mix, recipe follows
- 1/2 medium onion, diced small
- 2 eggs
- 1 tablespoon chopped garlic
- Salt and freshly ground black pepper
- 1/4 cup canola oil
- Dip for the cakes
- 1/2 cup sour cream, for serving
- 2 tablespoons freshly chopped parsley leaves
- 6 cups all-purpose flour
- 3 tablespoons baking powder
- 2 teaspoons salt

- 2 pounds beef stew meat, cut into bite-sized pieces
- 1 teaspoon kosher salt, plus more for seasoning
- 1 teaspoon ground black pepper, plus more for seasoning
- 1 tablespoon all-purpose flour
- 2 tablespoons canola oil
- 1 cup frozen sliced carrots
- 1 (8-ounce) package sliced brown mushrooms
- 3 cups diced red potatoes
- 1 (14.5-ounce) can diced tomatoes
- 2 tablespoons finely grated bittersweet chocolate
- 1 teaspoon crushed garlic
- 1 (1.5-ounce) packet meatloaf seasoning (recommended: McCormick)
- 1 (14-ounce) can low-sodium beef broth
- 1 cup red wine, preferably Merlot
- 1 leek, white part only, sliced and cleaned

- 1 lb ground beef or 1 lb bulk Italian sausage, cooked and drained
- 1 small onion, chopped fine
- 1/2 cup sliced mushrooms (optional)
- 1 1/2 cups pizza sauce or 1 1/2 cups spaghetti sauce
- 2 cups of shredded mozzarella cheese or 2 cups pizza cheese
