Oven Fries (Mad Hungry)

I fixed these without all the herbs
- 6 or 7 Idaho potatoes, peeled and sliced into 1/3-inch-thick French fry-style strips, soaked in cold water
- 4 tablespoons (1/4 cup) extra-virgin olive oil
- 1 tablespoon dried Italian herbs or some combo of dried oregano, thyme, marjoram, and basil
- 2 cups freshly grated Romano cheese
- 1/4 cup parsley leaves, finely chopped
- 4 tablespoons (1/2 stick) salted butter, cut into 6 cubes
- Coarse salt and freshly ground black pepper

- 3 tablespoons flour

1.Preheat the oven to 350 degrees Fahrenheit
- Baked Potato Mash
- – 4 large russet potatoes, scrubbed clean
- – 1/4 to 1/2 cup whole milk
- – 2-1/2 tablespoons butter
- – 1/2 teaspoon salt
- Filling
- – 1 tablespoon olive oil
- – 1/2 medium onion, diced
- – 8 ounces ground beef
- – 2 tablespoons flour
- – 1 cup beef broth
- – 2 teaspoons Worcestershire sauce
- – 1-1/2 teaspoons salt
- – 3/4 teaspoon black pepper
- – 1-1/2 cups frozen vegetables
- heit for 40 to 50 minutes until done.

- 2 cups, 4 handfuls, fresh shiitake mushrooms
- 1 1/3 to 1 1/2 pounds thin cut chicken breast or chicken tenders

Prepare the Mediterranean Salsa: Combine all of the ingredients in a large bowl and toss to mix well
- Mediterranean Salsa:
- 1 cup tomato, diced and seeded
- 1 cup fennel, finely diced
- 1 red bell pepper, finely diced
- 1/2 cup red onion, finely diced
- 1/2 cup kalamata olives, sliced
- 1/4 cup capers, drained, rinsed and squeezed dry
- 1 teaspoon garlic, minced
- 1/2 lemon, pulp and rind, seeded and chopped
- 2 tablespoons fresh parsley leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 3 tablespoons red wine vinegar
- 1 orange, zest minced, juiced
- 1/4 cup plus 2 tablespoons extra virgin olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Sea Bass: 1 whole sea bass (about 5 pounds), scaled and cleaned with head and tail intact
- Salt and freshly ground pepper
- 1/2 red onion, sliced into thin rings
- 1 lime, cut into thin rounds
- 3 sprigs fresh rosemary
- 2 cloves garlic, thinly sliced
- Dried rosemary branches for roasting (optional)

Saute onions in butter or margarine until transparent; crumble beef and saute until beef just loses pink color
- 1/4 cup chopped onion
- 1 lb nground beef
- 1 cup canned yellow kernel corn with sweet peppers
- 1/2 tsp salt
- 1 - 7 oz pkg cornbread rounds
- 2 Tbsp butter
- 1-15 1/2 oz can chili con carne
