Place caramels and evaporated milk in a heavy saucepan
- 1 - 7 oz. package caramels
- 1/4 cup evaporated milk
- 3/4 cup chopped pecans, divided
- 1-9" chocolate crumb piecrust
- 2 - 3 oz pkg cream cheese softened
- 1/2 cup cour cream
- 1 1/4 cups milk
- 1 - 3.9 oz pkg chocolate instant pudding mix
- 1/2 cup fudge topping
Mexican Tortilla Cassserole

Layer baking pan with tortillas and slap on the refried beans
- 2 cans refried beans (any brand)
- 2 cans green enchilada sauce (any brand)
- Ground turkey and ground beef (as much as you want)
- Soft tortillas
- Grated Mexican/cheddar cheese
- Anything for garnish (salsa, lettuce, tomatoes, avocado)
- Using salt and pepper to season, grill up ground turkey and beef.
Lettuce Wraps, Chinese Chicken

- 2 cups fresh shiitake mushrooms
- 1 1⁄2 lbs chicken tenders
- 2 tablespoons vegetable oil
- 1 teaspoon coarse salt
- 1 teaspoon coarse black pepper

- 1 tablespoon gingerroot, peeled and finely chopped
- 1 orange
- 1 ⁄2 red bell pepper, diced
- 1 (8 ounce) can water chestnuts, drained and chopped
- 3 scallions, chopped
- 3 tablespoons hoisin sauce

- Dressing:
- 2 Tbsp. fresh or 2 tsps. dried thyme leaves
- 2 Tbsp. fresh lime juice
- 1 Tbsp. olive oil
- 1 Tbsp. minced fresh ginger
- 2 tsps. brown sugar
- 1/2 tsp. salt
- 1/2 tsp. ground allspice
- 1/2 tsp. ground cinnamon
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. ground nutmeg
- 1 garlic clove, minced
- Salad:
- 1 (1-pound) pork tenderloin
- Cooking spray
- 4 cups salad greens
- 2 cups chopped peeled fresh pineapple
- 1 cup chopped papaya
