Chicken Breasts Tarragon

Cut whole chicken breast in half; In 6-quart Dutch oven, heat oil and 2 Tbs margarine or butter
- 4 whole chicken breasts (about 1 lb each), boned & skinned
- 2 Tbs olive oil
- 2 Tbs margarine or butter
- 6 shallots, chopped
- 2 pared carrots, sliced into ¼-inch rounds
- ¼ cup Cognac or brandy
- 1 cup dry white wine
- ¼ cup chopped fresh tarragon or 2 tsp dried tarragon leaves
- 1 ½ Tbs fresh chopped chervil or ½ tsp dried chervil leaves
- ½ tsp salt
- ⅛ tsp pepper
- 1 cup light cream
- 1 egg yolk
- 1 Tbs flour
- ¼ lb mushrooms, washed and thinly sliced
- 2 Tbs margarine or butter
- Springs of fresh tarragon
Pea Soup Andersen's Original Recipe

Boil hard for 20 minutes, then slowly until peas are tender
- 2 Quarts soft water
- 2 cups Andersen's specially selected green split peas
- 1 branch celery, coarsely chopped
- 1 large carrot, chopped
- 1 small onion chopped
- 1/4 teaspoon ground thyme
- 1 pinch cayenne
- 1 bay leaf
- salt
- pepper

- 1 (8 oz.) package cream cheese, softened
- 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
- 3/4 cup cold water
- 1 (4-serving size) package instant butterscotch pudding mix
- 1 cup (1/2 pt.) heavy cream, whipped
- 1 (8- or 9-inch) prepared graham cracker or baked pie crust
- Whipped cream, for garnish

- Salad:
- Water, as needed
- 1 pound red potatoes
- 2 teaspoons extra-virgin olive oil
- 8 ounces kielbasa, sliced into 1/4-inch thick rounds
- 1 stalk celery, finely chopped, about 1/2 cup
- 2 green onions, thinly sliced, about 1/4 cup
- Dressing:
- 1 1/2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoons freshly cracked black pepper

- 1 pound Angel Hair or Cappellini Spaghetti
- 4-6 tomatoes (the best, freshest you can find),
- 3/4 cup torn basil leaves (plus a little more basil for garnish)
- 1/3 cup coarsely torn oregano leaves
- 1/3 cup extra-virgin olive oil
- 1/3-1/2 pound (more or less) FRESH mozzarella (not the- brick kind). I’ve also used Boccocini which works very well
- 4-6 medium cloves garlic, smashed
- Coarse salt and freshly ground pepper
