Slow Cooker Pinto Beans

Honey Mustard Glazed Carrots

In 2-quart saucepan, heat ½ cup water to boiling
- 1 bag (1 lb) ready-to-eat baby-cut carrots
- 2 tablespoons honey
- 1 tablespoon olive or canola oil
- 2 teaspoons Dijon mustard
- 1 tablespoon fresh chopped parsley
- 1/4 ¼ teaspoon salt
- 1/8 ⅛ teaspoon pepper
Stuffed Pepper Stoup

From Sara Green, this is a "riff" on regular stuffed peppers
- 3 cups of rice
- 1 lb ground beef.. lean as you can find
- 1/2 cup of chopped green bell pepper
- 1/2 cup of red bell pepper
- 1 cup of finely chopped onion
- 3 cloves of garlic chopped ( I use minced)
- 2 cans of petite diced tomatoes (14.5 oz ones)
- 1 (14 oz) can of tomato sauce
- 2 cups of fat free reduced sodium chicken broth
- 1/2 tsp dried marjoram
- Sea Salt and Pepper to taste
Scallops with Pasta

Boil water for pasta. When it begins to boil, add salt and oil, then turn down and start the sauce
- 1/2 pound sea scallops, sliced 1/4-inch thick
- 1 medium fresh tomatoes, minced into 1/4" pieces
- 4 slices bacon or pancetta, diced fine
- 3 cloves garlic, minced
- Fresh thyme, salt and pepper to taste
- 1 pound angel-hair pasta (also cappelini or vermicelli)

- 2 cups sugar
- 3/4 cup unsalted butter, slightly softened and cut into chunks
