bread - gf, df whole grain bread

Combine first 6 ingredients in bread maker pan
- optional add ins:
- 3 large eggs lightly beaten
- 1 tsp apple cider vinegar
- 1/4 cup oil of choice (canola, olive, corn, coconut, grapeseed etc)
- 1 1/3 cup milk of choice – unsweetened (rice, hemp, almond, cows) warmed to body temperature
- 1 T +1 t honey
- 3 T brown sugar
- 1/2 cup millet,sorghum, quinoa, amaranth or buckwheat flour (choose one)
- 1/2 cup second choice of flour – millet, sorghum, quinoa, amaranth or buckwheat flour (choose one)
- 1 cup multi grain rice flour, brown rice flour or my favorite teff flour
- 1/2 cup tapioca flour
- 1/2 cup corn starch (potato starch works too)
- 3 t xanthan gum
- 1 1/2 t salt
- 2 1/4 t dry active yeast
- flax seeds
- sesame seeds
- sunflower seeds
- add in a total of about a 1/4 cup

Add all ingredients to a food processor and process until it becomes a crumbly, sticky texture
- 8 organic medjool dates (pitted)
- 1 cup organic pecans
- 1/2 teaspoon organic vanilla bean powder

Blend in your food processor (I use the Magic Bullet short cup
- 30 grams unsalted cashews (1/4c)
- 80 grams dates, which is a scant 2/3c (I use SunMaid, as they’re softer.)
- tiny pinch salt (brings out the sweetness)
- Optional: a drop or two of good-quality vanilla extract (I use about 1/8 tsp)

- 2 cups cooked black beans
- 1 cup coconut milk (or other alternative milk)
- 1/3 cup maple syrup (These brownies are not super sweet – if you’d like yours to be more sugary, add in a few more tablespoons)
- 1/2 cup cocoa powder
- 1/2 cup brown rice flour
- 1 tsp vanilla

I have two more secret ingredients that make this pie work
- 1 14 or 15-oz can organic pumpkin
- 1 1/2 cups full fat coconut milk (or vanilla soy/almond milk)
- 2 teaspoons bourbon vanilla
- 2 tablespoons light olive oil
- 1 tablespoon Ener-G Egg Replacer
- 3/4 cup organic light brown sugar
- 1/2 cup GF buckwheat or sorghum flour (or see tips below)
- 2 tablespoons tapioca starch/flour
- 2 teaspoons baking powder
- 1/4 teaspoon xanthan gum
- 1/2 teaspoon sea salt
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon nutmeg

- For the cake:
- 5 or 6 eggs, separated, preferably at room temperature (consider using pasteurized eggs; see Notes)
- 5 1/2 ounces (~1 1/2 cups) ground walnuts
- 1/2 cup sugar
- pinch of salt
- 1/2 teaspoon baking powder
- ~1 tablespoon butter for greasing baking pan
- For the filling:
- 6 1/2 ounces (~1 3/4 cups) ground walnuts
- 1/2 cup warm milk
- 1/4 pound (1 stick) unsalted butter
- 2/3 cup sugar
- 2 tablespoons Cognac
- 1 cup heavy cream, whipped
- For the garnish:
- confectioner’s (powdered) sugar (1/2 cup or so)
- sprigs of mint and/or berries (optional; strawberries and blackberries both work well)

(makes one 8×8 pan) Preheat oven to 350 F and grease an 8×8 inch square baking dish
- 1/3 C white rice flour (or your favorite gluten free all purpose flour. I’m a fan of Domata Living Flour. Regular all-purpose flour can also work for those who can have gluten)
- 1/3 C white sugar
- 1/3 C brown sugar
- 1/4 C cornstarch
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 C unsweetened applesauce
- 1/4 C oil
- 1 tsp vanilla extract
- optional: 1/3 C dairy-free chocolate chips
