- 1 (16.5 ounce) white cake mix
- Ingredients to complete cake mix eggs, water, oil
- 2 tablespoons finely grated lime zest
- TOPPING
- 8 ounce cream cheese, softened
- 1 can sweetned condensed milk
- 3/4 cup fresh lime juice
- 2 tablespoons finely grated lime zest
- 1 teaspoon vanilla
- WHIPPED CREAM
- 2 cups heavy cream
- 1/3 cup powdered sugar
- 1 tablespoon vanilla

Preheat oven to 350 degrees
- 1 c milk of choice
- 1/2 c coffee
- 1/2 c gluten-free cocoa, plus more for dusting
- 1/2 c sorghum flour (or oat or rice flour)
- 1/2 c potato starch
- 1/4 c tapioca flour
- 1/2 tsp plus 1/8 tsp xanthan gum
- 1 tsp baking soda
- 1/4 tsp fine sea salt
- 1/2 c (1 stick) unsalted butter, at room temperature
- 1 1/4 c sugar
- 1 1/2 tsp pure vanilla extract
- 2 large eggs, at room temperature

- 2 cups sorghum flour (I used 3:1 sourghum/sweet potato flour)
- 1/2 cup palm sugar (or honey)
- 2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon xanthan gum
- 3/4 cup egg white substitute or 6 egg whites or 3 eggs
