pie - pineapple fantasy pie

Note: Be sure that you’re using full-fat coconut milk, not coconutmilk beverage or lite coconut milk
- 1 can (20oz) crushed pineapple in 100% juice
- 1 can (13.6oz) coconut milk or coconut cream
- 1/2 tsp pure vanilla extract
- 1/4 tsp salt
- 2 tbsp pure maple syrup OR pinch uncut stevia
- optional 3 tbsp virgin coconut oil
- optional pie crust (I used my Gluten Free Pie Crust Recipe) in an 8.5-inch springform
Sweet Pea and Potato

Sweet Pea and Potato Soup Yield: 2 1/2 cups (600 ml)
- 1/2 cup (70 g) frozen or fresh sweet peas, steamed
- 1/2 cup (60 g) potatoes, peeled and cooked
- 1/4 cup (60 g) sour cream
- 1 cup (240 ml) skim milk
- 1 teaspoon onion
- 1 teaspoon chicken bouillon (optional)
- 1/4 teaspoon salt
nut/candy - Slow Cooker Maple Glazed Pecans

Throw all the ingredients in a crock pot Cook on low for a 1-3 hours making sure to stir often
- 3 cups raw pecans
- 1/4 cup maple syrup
- 2 tsp ground vanilla beans (vanilla extract would probably work as well)
- 1 tsp sea salt
- 1 T coconut oil
Bars/Cookies - Chocolate Fudge Strawberry

- Cookie:
- 1/3 cup raw pecans
- 1/2 cup almond flour
- 4 tbs raw cacao powder
- 5 pitted medjool dates
- 1/2 tsp vanilla extract
- 1/2 tbs coconut oil
- Chocolate Fudge:
- 1/4 cup almond milk
- 1/4 cup chocolate chips (Enjoy Life)
- 2 tablespoons raw cacao powder
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1 to 2 tablespoons raw honey
- 1/2 cup almond butter
- pinch of salt

Larabars Peanut Butter

In the food processor, blend the peanuts and salt into a powder
- 2 cups peanuts (I used raw unsalted peanuts)
- 10-12 medjool dates (If you use another kind of date, you may need to add a couple more. The medjool dates are larger.)
- 2-3 T water
- 1/4 cup chocolate chips (I used carob chips. Gluten free use Enjoy Life chips)

- 1 bundle of raw kale, deveined and chopped
- 3-4 medium sized apples (Pink Ladies are great in this salad), chopped
- 3 medium sized limes, juiced (about 1/3-1/2 cup fresh lime juice)
- 1/3 cup oil (a combination of olive oil and coconut oil is my favorite)
- 1 bunch of cilantro, roughly chopped
- 1-2 cloves garlic, minced (be careful not too add too much because raw garlic is pretty powerful)
- 1 tbs honey
- 1/2 tsp salt
- 1/2 tsp pepper
Chili - Sweet Potato & Quinoa Chili

Heat a small amount of oil in a dutch oven or large soup pot over medium heat
- extra virgin olive oil
- 1 sweet onion, diced
- 5 cloves garlic, minced
- 1 can tomato paste (6 oz) (beet puree?)
- 1 T chili powder
- 1 T cumin
- 1 t oregano
- 1 can black beans, rinsed and drained (15 oz)
- 1 can red kidney beans, rinsed and drained (15 oz)
- 1 box vegetable stock or broth (32 oz)
- 1 sweet potato, peeled and cut into 1/2″ cubes
- S + P
- 1 cup dry quinoa, rinsed and drained
- avocado for garnish

Cookie - crunchy Paleo Chocolate Chip Cookies - Gluten-Free

Preheat your oven to 300°F
- 1 cup (112 g) blanched almond flour (I use either nuts.com or Honeyville)
- 1/2 cup (60 g) tapioca starch/flour (I use nuts.com – many other brands have a metallic taste)
- 1/4 cup (32 g) arrowroot starch (again, nuts.com)*
- 2 tablespoons (16 g) coconut flour (nuts.com)*
- 1/2 teaspoon kosher salt
- 1 teaspoon baking soda
- 3/4 cup (120 g) coconut sugar, ground into a fine powder
- 6 ounces miniature dark chocolate chips (I use Enjoy Life Brand)
- 3 tablespoons (42 g) virgin coconut oil, melted and cooled
- 2 eggs (120 g out of shell) at room temperature, beaten
- NOTE: Arrowroot and tapioca starches have different properties, and I found that a blend of these two worked best in these cookies. If you don’t have both, and would like to use all of one or all of the other, give it a shot and let us know how it goes!
chips - Spinach Chips

Preheat oven to 350 degrees
- 2 large handfuls of spinach (I used about 1/2 the bag)
- 1 Tbsp olive oil
- 1/2 Tbsp Italian herb seasoning (I use Frontier & sometimes McCormick)
- 1/8 tsp sea salt, or to taste

In a food processor, process the almonds, walnuts, oats, cinnamon and salt to a fine meal
- 2/3 cup raw almonds
- 2/3 cup raw walnuts
- 2/3 cup raw oat flakes (see note below)
- 1/4 tsp ground cinnamon
- 1/8 tsp sea salt
- 1/4 cup raw agave nectar
- 2 tsp pure vanilla extract
- 3 tbsp cacao nibs or dark chocolate chips
