pizza dough - gluten free

Preheat oven to 425 degrees
- 1 1/2 cups All Purpose Gluten-free Flour Blend
- 1 1/2 teaspoons xanthan gum
- 1 tablespoon dry active yeast
- 1 envelope unflavored gelatin
- 1/2 teaspoon kosher or fine sea salt
- 1/2 teaspoon agave nectar, sugar or honey
- 2 tablespoons extra virgin olive oil
- 2/3 cup tap water (around 110 degrees is perfect)
flour - brown rice flour blend

- 1 1/3 cups brown rice flour
- 1 1/3 cups tapioca flour/starch
- 1 1/3 cups cornstarch
- 1 tablespoon potato flour
- (I couldn’t find potato flour in the store so I just blended some potato flakes up in my Blendtec and that worked just fine!)

Combine coconut oil and sweetener
- 1/4 cup rice crispies (brown or white, or gf) (30g)
- 1/2 cup cocoa powder (50g)
- 1/4 cup virgin coconut oil (60g) (See nutrition link below, for substitutions)
- Sweetener to taste (options include: pure maple syrup, NuNaturals alcohol-free vanilla stevia drops, or agave. I haven’t tried granulated sugar or powdered stevia in this recipe.)
- tiny dash salt (makes the flavor pop)

- 1/2 Cup Nutella

- 2 Eggs
- 2 tsp Baking Powder
- 1 tsp Salt
- 1 1/2 Cup Confectioners Sugar
- 2 tbsp Milk
- Rainbow Sprinkles (preferred)

Oil a 9×5" or 9x4x4 metal loaf pan
- 1 cup non-fat milk (or water, for dairy-free), heated to 110°F
- 2 Tablespoons honey (or agave syrup)
- 2 1/4 teaspoons instant dry yeast
- 1 1/4 cups gluten-free oat flour; (or sorghum or millet flour, if oat intolerant)
- 1 cup tapioca flour/starch
- 1/2 cup arrowroot powder
- 1/4 cup flax seed meal
- 1 Tablespoon guar gum
- 3/4 teaspoon fine sea salt
- 1 teaspoon apple cider vinegar
- 4 large egg whites, at room temperature
- 1/4 cup extra virgin olive oil (or neutral cooking oil)
- Oil or gluten free spray oil for pan
- 2 teaspoons gluten-free oats for top (optional)

- 1 cup pecans
- 1/2 cup sunflower seeds
- Pinch of salt
- 3 tbsp. natural cacao powder
- 2 tbsp. coconut nectar
- 3 to 4 tbsp. coconut oil, melted
- Honey or maple syrup can be substituted for the coconut nectar if desired.
