1 Preheat oven to 400°F. Grease a mini-muffin tin
- 1 egg*
- 1/3 cup olive oil
- 2/3 cup milk
- Scant 1 1/2 cups (170 grams) tapioca flour
- 1/2 cup (packed, about 66 grams) grated cheese, your preference, though we got the best results from Mexican farmer's cheese - queso fresco
- 1 teaspoon of salt (or more to taste)

Combine almond milk, chia seeds, vanilla and sweetener in a bowl
- 2 cups unsweetened almond milk, homemade or store bought (see recipe for homemade almond milk below)
- 1/2 cup chia seeds
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons pure maple syrup or raw honey
- Seasonal fruit for topping (blueberries, peaches, figs and plums are pictured here)

- 2 garlic cloves, minced

1. Preheat the oven to 350 degrees F
- 1 egg,
- 1/2 cup packed grated Parmesan cheese
- 1 cup packed shredded cheddar cheese
- 2 tb plain whole milk yogurt (or sour cream)
- 1/4 cup arrowroot (or tTBSP flour)
- pinch cayenne pepper
- pinch fine ground celtic sea salt
- 1/4 tsp baking soda
- (could add in sauteed onions, bacon, etc)
