Salad: Grilled Caesar

Adding smoky char to a Caesar salad sounded like a good idea, as long as we could avoid limp lettuce
- DRESSING:
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1/2 cup mayonnaise
- 1/2 ounce Parmesan cheese, grated (1/4 cup)
- 1 tablespoon white wine vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 2 anchovy fillets, rinsed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup extra-virgin olive oil
- SALAD:
- 1 (12-inch) baguette, cut on bias into 5-inch-long, 1/2-inch-thick slices
- 3 tablespoons extra-virgin olive oil
- 1 garlic clove, peeled
- 3 romaine lettuce hearts (18 ounces), halved lengthwise through cores
- 1/2 ounce Parmesan cheese, grated (1/4 cup)
Jam/Jelly: Crock-Pot Vanilla Spiced Pear Butter

1. Add pear puree to crock-pot
- 7 lbs. Pears, peel, cored and pureed in blender
- 3 1/2 Cups Sugar
- 1 1/2 Teaspoon Vanilla Extract
- 1 Teaspoon Cinnamon
- 3/4 Teaspoon Nutmeg
- 1 Orange, juice only
Instant Pot "Baked" Ziti

Lightly spray the bottom and sides of a 6-quart Instant Pot with nonstick cooking spray
- 2 cups broth (I use low-sodium chicken broth)
- 2 cups cream (see note for lightened up substitutions)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, finely minced (or 1/2 teaspoon garlic powder)
- 16 ounces uncooked ziti pasta or other tube-shaped pasta
- 15-ounce can crushed tomatoes (or 15-ounce can dished tomatoes plus 2 T tomato puree)
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons dried basil
- 1/2 to 1 cup freshly grated Parmesan cheese
- Fresh basil or parsley, for serving (optional)

For the dough: Whisk together 2 cups cold water, the yeast and 1 1/2 tablespoons oil
- Dough:
- 1 tablespoon dry yeast
- Extra-virgin olive oil
- 5 1/2 cups bread flour
- 2 teaspoons salt
- Filling:
- 2 cups grated smoked mozzarella
- Salt
- 1/2 bunch fresh basil, leaves chopped
- 1 tablespoon chopped garlic
- Freshly ground black pepper
- 4 ounces salami, sliced thin
- Extra-virgin olive oil
- Toppings:
- 1 tablespoon fresh rosemary leaves, chopped
- 1 teaspoon sea salt, such as Maldon
- 1/4 pint cherry tomatoes, halved

Beat butter, cream cheese, milk and sugar in medium bowl
- 1 cup butter, softened
- 1 (8 oz.) pkg. cream cheese, softened
- 1 Tbsp. milk
- 1 Tbsp. sugar
- 1 egg yolk
- 1 1/2 cups all-purpose flour
- 1/2 tsp. baking powder
- 1 can Solo Filling (any flavor)
- Confectioners sugar
Fruit Salad with Orange-Vanilla Syrup

Place the sugar, 1/2 cup water, orange zest, juice and vanilla bean in a small pan and stir to dissolve the sugar
- Orange-Vanilla Syrup:
- 1/2 cup sugar
- 1/2 cup water
- Zest and juice of 1/2 orange
- 1/2 vanilla bean (or 1/2 Tbsp. vanilla bean paste)
- 1 tablespoon dry instant vanilla pudding mix
- Fruit:
- 4 pints strawberries, hulled and halved
- 2 pints blueberries
- 2 cups green grapes, halved
- 2 cups red grapes, halved
- Fresh mint leaves

1. Rinse strawberries and cut around the top of the strawberry
- 1 lb large strawberries
- 8 oz. cream cheese, softened (can use 1/3 less fat)
- 3-4 tbsp powdered sugar (4 tbsp for a sweeter filling)
