Cowboy Beef & Bean Skillet

Serve with coleslaw and corn bread
- 1 1/2 lbs beef sirloin steak, cut into thin strips
- 4 slices bacon, chopped
- 1 onion, chopped
- 1 red pepper, chopped
- 1 can (16 oz) pinto beans, rinsed
- 1 can (15 oz) northern beans, rinsed (optional)
- 3/4 cup BBQ sauce
- cayenne pepper to taste

Pork Chops with Dijon Cream Sauce

- 4 (4-ounce) boneless center-cut loin pork chops (1/2 inch thick) or Pork Tenderloin sliced in Medallions
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking spray
- 1/3 cup fat-free, less-sodium chicken broth
- 1/3 cup fat-free half-and-half
- 1 1/2 tablespoon Dijon mustard
- Chopped fresh parsley (optional)

- 2 Tablespoon water
- 1 tsp salt
- 1/4 tsp seasoned pepper
- 1/2 C Italian flavored dry breadcrumbs

Pan-Glazed Chicken with Basil

Serves/Makes: 4 Sprinkle both sides of chicken with salt & pepper
- 4 boneless, skinless chicken breast halves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper, freshly ground
- 2 teaspoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons basil -- fresh, chopped
Sausage and Black Bean Soup

- 6 ounces turkey kielbasa sausage, sliced
- 1 cup diced green, sweet red, or yellow pepper
- 1 1/2 cup fat-free, reduced-sodium chicken broth
- 1 (15-ounce) can no-salt-added black beans, rinsed and drained
- 1/4 cup picante sauce or salsa

Zesty Italian Stuffed Peppers

Preheat oven to 400 degrees
- 3 bell peppers (green, red or yellow)
- 1 pound ground beef
- 1 hot italian sausage
- 1 jar (14 ounces) spaghetti sauce
- 1 1/3 cups French's French Fried Onions, divided
- 2 T Frank's RedHot Original Cayenne Pepper Sauce
- 1/2 cup uncooked instant rice
- 1 cup (4 ounces shredded mozzarella cheese
Au Gratin Potatoes

1. Heat oven to 375 degrees 2
- 2 T butter or stick margarine
- 1 small onion, chopped (1/4 cup)
- 1 T all-purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups milk
- 2 cups shredded natural sharp Cheddar cheese
- 6 medium potatoes, peeled and thinly sliced
- 1/4 cup dry bread crumbs
- Paprika, if desired
