Preheat oven 400* Beat1/4 cup butter and sugar in bowl until light and fuffy
- 1/4 cup unsalted butter softened
- 1/3 cup vanilla sugar :(Process sugar :2 cups and 1 vanilla bean cut into small pieces, process until fine, store into room temp container)
- 1/4 cups egg whites
- 1/3 cups unbleached flour
Sandwich: Authentic Cuban

Growing up in South Florida, there is no doubt I've had my share of Cuban sandwiches
- 1 loaf of Cuban bread
- 1 jar of sliced Kosher pickles
- 4 tablespoons Dijon mustard
- 4 tablespoons whole grain mustard
- 1/4 cup mayonnaise
- 1 fully cooked pork roast
- 1 package of smoked ham
- 1 package of baby Swiss cheese
Black Bean Soup

Now this is incredible when you serve it with cilantro shrimp roasted in the oven
- 12 oz pkg black turtle beans
- 2 1/2 quarts cold water (10 cups)
- 1 cup chopped celery
- 1 cup chopped green pepper
- 2 cups chopped onion
- 1/4 cup butter
- 4 teaspoon flour
- 1/4 cup parsley
- Rind and bone of smoked hammock or ham
- 2 medium leeks, thinly sliced
- 2 bay leaves
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup sherry or madeira
- Cumin
- Chili pepper
Bisque: Crab with Sweet Red Bell Pepper

Heat oil in large pot over medium heat
- 2 tablespoon olive oil
- 3 cups coarsely chopped red bell peppers (about 2 large)
- 1 cup chopped green onions, divided in half
- 1 cup coarsely chopped celery
- 2/3 cup coarsely chopped carrots
- 1/2 cup coarsely chopped red onion
- 2 teaspoons dried tarragon
- 1/4 teaspoon cayenne pepper (CAREFUL)
- 2-14 1/2 oz diced peeled tomatoes in juice
- 3 8 oz. bottles clam juice
- 1 cup dry white wine (Sauvignon Blanc)
- 1 cup heavy whipping cream
- 12 oz. crabmeat
Dressing: Balsamic Vinagerette

- 1 tbs balsamic vingar

- 6 1\2 cups chicken broth
- 3 pounds fresh asparagus...trimmed, tips reserved, stalks coarse chop or
- 3 ten ounce pkgs frozen spears unthawed
- Sour cream
Sauce: Gorganzola

In a heavy saucepan boil the cream then let simmer for 45 minutes until thickened then add cheese
- 1 quart heavy cream
- 1 large wedge of gorganzola cheese 4 0z
- 3 tablespoons parmesean salt
- 3/4 tsp salt
- 3/4 tsp pepper
- 2 tablespoons parsley, chopped

I love making this with savoy cabbage and mustard crusted roast pork
- 2 cups water plus more as needed
- 3 eggs
- 2 3/4 cups, flour
- 2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp nutmeg
- 2 tbs chopped mixed fresh herbs, thyme, rosemary and chives
- 4 tablespoons butter
- 2 tablespoons chives
- 2 tablespoons chopeed fresh parsley
Cake: Easter Ricotta Pastiera

Bring milk to a boil in a large sauce pan over medium high heat
- 1 quart whole milk
- 3/4 cup arborio rice
- 1 teaspoon cinnamon
- 1 vanilla bean, split or 1 tsp vanilla paste
- 1 1/4 cups sugar> DIVIDED into 3/4 cup and 1/2 cup
- 3 lbs fresh ricotta cheese, drained 3 hours, or overnight in cheesecloth
- 3 large eggs, plus
- 3 large egg yolks, lightly beaten
