  • 5 1/4 5 1/4 1/4 cup whole milk
  • 9 9 9 egg yolks
  • 7/8 7/8 1 7/8 sugar...or it's 1 and 7/8 cups of sugar

  • 3 3 3 cups whipping cream

  • 1/2 to 2/3 cup ice water
  • 1 egg beaten with 1 tablespoon water for egg wash
