Salmon: Fennel Roasted

I love this recipe because it's so easy, and the salmon isn't dry at all
- 3 lb salmon filet
- 1 large whole onion sliced
- l large whole fennel bulb sliced
- fresh thyme
- salt and pepper
- 2 whole onions
- 1 large bunch of fresh dill
- 1 stick butter
- 1/2 cup white wine

Note to self: try this with 7/8 cup sugar rather than 1 and 7/8 cups of sugar
- 5 1/4 5 1/4 1/4 cup whole milk
- 9 9 9 egg yolks
- 7/8 7/8 1 7/8 sugar...or it's 1 and 7/8 cups of sugar
- 3 3 3 tablespoons vanilla paste
- 3 3 3 cups whipping cream
- to 5 to manufacture of ice cream makers directions. Add anything you like at the last 5 minutes of cooking.

Put all ingredients except olive oil and cheese in a food processor and blend completely
- 1 egg yolk
- 2 cloves garlic, chopped
- 2 teaspoon dijon mustard
- 6 to 8 anchovies
- 1/2 cup fresh lemon juice
- 2 teaspoon salt
- 1/2 teaspoon pepper
- 1 and 1/2 cup olive oil
- 1/2 cup grated parmesean cheese

- 2-3 pound pork loin roast
- 6 whole cloves of garlic
- 2 tbl of lemon zest
- 2 tbl fennel seeds
- 1 tbl kosher salt
- l tbl pepper
- 1 tbl dijon mustard
- 1/3 cup chopped rosemary

Preheat oven 375* Melt the butter in a large pot over medium heat
- Pastry:
- 1 1/2 sticks of butter
- 2 cups sliced yellow onions
- 1 fennel bulb thinly sliced
- 1/2 cup flour
- 2 1/2 cups chicken stock
- 1 tablespoon Pernod
- Pinch of safron threads
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 3 tablespoons heavy cream
- 1 1/2 cups large diced potatoes
- 1 1/2 cups asparagus tips
- 1 1/2 cups 3/4" diced carrots
- 1 1/2 cups 3/4" diced butternut squash
- 1 1/2 cups frozen small whole onions
- 1/2 cup flat leaf parsley
- 3 cups flour
- 1 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup shortening, crisco in fridge
- l stick cold butter, diced
- 1/2 to 2/3 cup ice water
- 1 egg beaten with 1 tablespoon water for egg wash

- 1 ounce good semisweet chocolate, chopped
