My daughter, Ellise, loves lemonade
- 1 cup fresh squeezed lemon juice (about 5 to 6 lemons)
- 1/2 to 3/4 cup superfine sugar to taste
- 4 cups water
- l cup crushed ice
Soup: Leek and Potato

Oh this is soo good. We eat this all the time, with panini sandwhiches and cuban sandwhiches and just by itself
- 3 tablespoons butter
- 1 onion, finely chopped
- 3 leeks, sliced
- 1 celery stalk, finely chopped
- 1 garlic clove, finely chopped
- 1/2 pound potatoes, chopped
- 3 cups chicken stock
- 3/4 cups heavy cream
- 2 tablespoons chopped chives
Arroz Con Pollo

Dry the chicken well and saute until golden brown
- 1 -3 pound chicken cut up
- 1/4 cup cooking oil
- 1/2 cup chopped onions
- 1 clove garlic, sliced paper thin'
- 1/2 cup chopped green pepper
- 1 can tomatoes
- salt and pepper
- 1/2 tsp paprika
- 4 cloves
- 2 small bay leaves
- 1 cup raw rice
- 1 10oz 10oz pkg peas at room temperature
- 1 sweet red pepper, juliened

- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 large onion, chopped
- 4 minced garlic cloves
- 1 tsp. minced thyme
- 1 tablespoon olive oil
- 2 (32 oz.) container vegetable broth
- 2 plum tomatoes, seeded and chopped
- 1 medium zucchini, chopped
- 1 1/4 tsp. kosher salt
- 1/2 tsp. fresh ground pepper
- 1 (15 oz.) can cannellini beans, drained and rinsed
- 1/2 cup uncooked mini bowtie pasta
Frosting: Cream Cheese

Blend first 3 ingredients together, then add confectionary sugar
- 8 oz cream cheese
- 1 1/2 stick butter
- 1/2 tsp vanilla
- 3 1/2 cups confectionary sugar
Sauce: for fish

This is absolutely delicious with halibut
- 1 cup chopped onion
- 1 cup chopped fennel
- 3 tbl olive oil
- 1 teaspoon minced garlic
- 28 oz can drained plum tomatoes
- l tsp salt
- 3/4 tsp pepper
- 2 tbls chicken stock
- 2 tbls white wine
- 1/2 cup chopped fresh basil
- 2 tbls drained capers
- 1 tblsp butter
- Fish

I made this once for my husband, I swear he could eat the whole loaf
- 1/2 cup white sugar
- 4 cups flour (minus 1 tablespoon)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3 cups golden or dark raisins
- 2 eggs, lightly beaten
- 1 1/4 cups buttermilk
- 1 cup sour cream
Dressing: Bleu Cheese Stilton

Put everything in food processor until creamy
- 4 oz stilton cheese
- 1 cup mayo
- 1 cup cream
- 2 tbl tarrogon vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
Torte: Austrian Linzer

This is a fabulous authentic Austrian Torte that is truly a favorite of mine
- Crust:
- 1 3/4 cup sifted all-purpose flour
- 3/4 cup sugar
- 2 tsp dry cocoa powder
- 1 tsp baking powder
- 3/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/2 cup (l stick) butter, softened
- 1 egg, well beaten
- 1 cup whole blanched almonds, ground
- 2 tablespoon kirsch or cherry brandy
- 1/2 tsp grated lemon rind
- 2 tablespoon lemon juice
- Filling:
- 1 jar (10 oz) red raspberry jam
- powdered sugar

Every year on Halloween I make this chowder, and I serve it with a snake sandwhich that is delicious
- 1/4 pound diced bacon
- 1 cup diced onion
- 5 6 ounce cans of clams, reserve the juice
- 3 medium potatoes, cubed
- 3 cups light cream (half and half)
- 1/4 cup butter
- salt and pepper
