Everyone loves these. Sometimes I put a chocolate glaze over them and they are incredible
- 3/4 pound butter, room temp
- 2 cups sugar
- 5 extra large eggs, room temp
- 1/2 teaspoon vanilla
- 1/2 teaspoon almond extract
- 3 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 14 oz shredded cocount
Coconut Macaroons

Preheat oven to 325* Combine the coconut, condensed milk, and vanilla in a large bowl
- 14 ounces shredded coconut
- 14 ounces condensed milk
- 1 teaspoon vanilla extract
- 2 extra large egg whites, at room temperature

Pastry Cream About 2 cups

Beat the egg yolks and sugar on medium high speed for 4 minutes, or until thick
- 5 extra large yolks, room temp
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 1 1/2 cups scalded milk
- 1/2 teaspoon vanilla extract
- 1 teaspoon cognac
- 1 tablespoon butter
- 1 tablespoon heavy cream
Soup: Minestrone

This soup is so good for any time of the year
- 2 tablspoons olive oil
- 1 onion, chopped
- 2 carrots, peeled, chopped
- 2 celery stalks, chopped
- 3 oz thinly sliced pancetta, coarsely chopped
- 2 garlic cloves, minced
- 1 pound swiss chard, stems trimmed, leaves coarsely chopped
- 1 russet potato, peeled, cubed
- 1 14oz can diced tomatoes
- 1 fresh rosemary sprig
- 1 15 oz can cannellini beans, drained, rinsed
- 2 14 oz cans beef broth
- 1 oz piece Parmesan cheese rind
- 2 tablespoons chopped fresh Italian parsley leaves
- salt and pepper

- Cake:
- 2 cups unbleached flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 3 eggs/room temperature
- 1 1/2 cups sugar
- 3/4 cups mayonnaise
- 1 can crushed (8 oz) pineapple-undrained
- 2 cups shredded carrots
- 3/4 cups chopped walnuts
- 1 cup shredded coconut
- Cream Cheese Icing:
- 1/2 stick softened butter
- 2 - 3 oz packages soft cream cheese
- 4 1/2 cups sifted powder sugar
- 1 teaspoon vanilla

- 1 cup sour cream, room temp
- 1 1/2 teaspoon vanilla extract
- zest of 1 whole lemon
- 3 cups flour
- 1/3 cup cornstarch
- 1 teaspoon baking soda
- 24 ounces semisweet chocolate chips
- 1 1/2 cups heavy cream
- 2 tablespoons light corn syrup
- 1/2 teaspoon vanilla
- 4 tablespoons soft butter
Cornish Hen: Beer roasted

This is a phenominal recipe that has such an interesting flavor
- 2 rock cornish hens, split in half
- 10 cloves of whole garlic, peeled
- 1/4 pound of thick bacon strips, quartered
- 4 whole bay leaves
- 2 branches of rosemary, cut into pieces
- 1 tablespoon juniper berries
- 2 cups of dark beer
Ice Cream: Caramel Salted

Wisk together egg yolks and sugar until pale yellow
- Base:
- 4 egg yolks
- 3/4 cup sugar
- 1 cup warm milk
- 2 cups heavy cream
- Caramel:
- 1 1/4 cup sugar
- 3/4 cup cream
- 2 tsp sea salt or fleur de sal
- 1 tbs vanilla
