Crust: Combine first 5 ingredients in large bowl
- Crust:
- 3/4 cup flour
- 2/3 cup yellow cornmeal
- 2/3 cup powdered sugar
- 2 teaspoons minced orange peel
- 7 tablespoons butter, room temperature
- 1 large egg yolk
- 2 teaspoons vanilla extract
- Filling:
- 1 cup whipping cream
- 1/2 cup fresh orange juice
- 5 large egg yolks
- 1/4 cup plus 1 tablespoons sugar
- 2 tablespoons Grand Marnier
- 1 tablespoon minced orange peel
- 3 oranges peeled
- 2 1/2pint boxes raspberries
Pork: Chops with Mushrooms, Bourbon and Cream

- 2 tablespoons olive oil
- 1 pound mushrooms, sliced
- 1/4 cup chopped shallots
- 2 large garlic cloves, chopped
- 1/2 cup dry white wine
- 1 cup chicken stock
- 1/2 cup whipping cream
- 1/4 cup plus 1 tablespoon bourbon
- 1 large egg
- 2 tablespoons water
- 4 6 to 7 oz. center-cut pork chops
- all purpose flour
- 2 cups fresh breadcrumbs from French bread
- 3 tablespoons vegetable oil
- 2 tablespoons minced basil fresh

One Christmas, Ellise, my youngest daughter and I made these to ship off as gifts for my sister in California
- 3 sticks soft butter
- 1 cup sugar
- 1 teaspoon vanilla
- 3 1/2 cups flour
- 1 egg beaten with 1 tablespoon water for wash
- 7 ounces flaked coconut
- Raspberry or apricot jam
Chicken, Mediteranean

Saute chicken in bacon drippings until golden brown
- Bacon drippings
- 6 pieces of chicken thighs
- 3/4 cups chopped celery
- 1/2 cup chopped onion
- 1 pepper chopped
- 2 minced garlic cloves
- 2 cups tomatoes
- 2 tsp. curry powder
- 1/2 tsp. dried thyme
- salt
- pepper
- 1/2 cup golden raisins
- 1 cup chicken broth

I love this dessert! There is nothing more elegant or satisfying in my book
- For the 2 ramikins or the souffle dish:
- 1 About 1 tablespoon of butter
- 2 or 3 About 2 or 3 tablespoons of sugar
- For the Souffle:
- 1/3 cup sugar: separate by 1 tablespoon of sugar
- 3 eggs, separated at room temperature
- 2 ounces of bittersweet chocolate, melted
- 1/4 teaspoon cream of tartar

In a large bowl, cover the lentils with boiling water and let sit 15 minutes
- 1 pound French green lentils such as du Puy
- 1/4 cup olive oil,
- 4 cups diced yellow onions (3 large)
- 4 cups chopped leeks, white and light green parts only (2 leeks)
- 1 tablespoon minced garlic (2 cloves)
- 1 tablespoon salt
- 1 1/2 teaspoon pepper
- 1 tablespoon minced thyme
- 1 teaspoon ground cumin
- 3 cups medium diced celery (8 stalks)
- 3 cups medium diced carrots (4 to 6 carrots)
- 3 quarts chicken stock
- 1/4 cup tomato paste
- 1 pound kielbasa, cut in half lengthwise and sliced
- 2 tablespoons dry red wine or red wine vinegar
- grated Parmesan cheese

- 1/2 cup (1 stick) butter
- 1 cup diced onion
- 1/2 cup flour
- 6 cups chicken stock
- 5 cups diced peeled butternut squash (2 large pieces)
- 1 cup dry white wine
- 3 bay leaves
- 1 cup heavy whipping cream
- salt and pepper
- 1 pound of shrimp or lobster

- 36 (1/4" thick) French baguette slice
- 1 (3 oz) package cream cheese, softened
- 1/2 cup (2 oz) crumbled blue cheese
- 1/2 cup fig preserves or jam
